Making chicken burritos tonight ... can you help?!


Question: I'm making chicken burritos for the first time tonight.

anyone have any recipes, or some crazy good idea's for me??

Do I use taco seasoning? or can I use the Fajitas seasons I have?

SUPER EASY~

CHICKEN BURRITOS

8-flour tortillas
3 c. shredded cooked chicken
1 1/4 c. water
1 (1 1/4 oz.) env. taco seasoning mix
1 1/2 c. shredded lettuce
1 c. diced tomato
1 c. (4 oz.) shredded Cheddar cheese
1/2 c. taco sauce

Heat tortillas according to package directions. In medium skillet, combine chicken, water and taco seasoning. Bring to boiling; reduce heat. Simmer, uncovered, 15 minutes, stirring occasionally. To assemble burritos, spoon about 1/4 cup chicken mixture just below center of each tortilla.
Add some of the lettuce, tomato, cheese and taco sauce to each tortilla. Fold bottom edge of each tortilla up and over just until filling is covered. Fold opposite sides of tortilla in, just until they meet. Roll up from the bottom. Serve with additional taco sauce, if desired.

Serves 8.

Use the fajitas seasoning. I like adding pepper jack cheese and diced green chilies.

CHICKEN BURRITOS

1 lg. can refried beans (Del Rio or Fiesta: neither contains lard)
2 breasts of chicken, boneless
Salsa; 1 jar mild or medium
Peppers; green, yellow, red, diced
Tomatoes, diced
Lettuce, cut
Green onions, diced
Sour cream
Cheese, grated Cheddar or white cheese
Flour tortillas, burrito size

You may wish to prepare your own red beans, otherwise, use the canned beans. Bake chicken breasts, sprinkling Cajun seasoning on top if you wish. Cut chicken into bite-size pieces. Mix Salsa with beans. Place chicken and beans on tortilla and roll up. Put into rectangular Pyrex. Add more Salsa to top. Sprinkle with grated cheese. Before serving, microwave for 6-8 minutes, then turn dish and repeat for another 6-8 minutes. The cheese should be melted and the burritos "bubbly".
Condiments: Prepare first. Dice peppers, onions, tomatoes and lettuce. These items and sour cream are to be sprinkled on the burrito by each individual. Salsa: in a dish for those that enjoy more on top of burrito. Serves 6-8.

CHICKEN - CHEESE BURRITOS

1 pkg. flour tortillas
Cook chicken, cut up
1 jar green chili sauce
1/2 c. tomato sauce
Grated cheddar cheese

Mix salsa, tomato sauce and chicken pieces. Place a couple tablespoons chicken mixture on tortilla. Top with cheddar cheese. Roll up tortillas and tuck ends under. Place in 9x13 inch pan. Bake at 350 degrees for about 20 minutes.

CHICKEN BURRITOS

1 1/2 c. cubed chicken (cooked)
1-2 tbsp. chopped green chile
1-2 tbsp. chopped onion
5 flour tortillas
1/2 c. shredded Jack cheese
1 tbsp. sour cream
1/4 tsp. salt

Mix chicken, chiles, onion, cheese, sour cream and salt. Spread about 1/2 cup down center of each tortilla; roll. Place on a plate, wrap with saran wrap and refrigerate about 30 minutes. Place in paper towel. Heat in microwave oven 30- 45 seconds each. Let stand 5 minutes.

You can make them with chicken strips, Alfredo sauce and green chili's...

or.... just use taco seasoning if you want it more like a taco meat...

I buy canned re fried beans heat in a pan with 3 TBS water to make it creamier and easier to use. Spread the beans on tortilla first, then add my other fillings.

If you want to make enchiladas... put filling in and roll.. put in baking dish, cover with the Alfredo sauce and green chill is mixture. Sprinkle shredded cheese on top and bake until bubbly and cheese is melted.
