but a little salt in it and let it sit. it should dry it up a bit.

Mushrooms have a lot of water in them, naturally. You need a good stringy cheese like mozzarella and I don't know what you used. Cheeze with a low moisture content is best. Better luck next time.

It's helpful to put more of a stuffing in them, not just cheese. Because cheese is usually fatty (the good cheese, anyway, admit it), and mushrooms are moist, it's best to mix shredded cheese and a bit of breadcrumbs to absorb the extra moisture and grease from the cheese. You could also stuff them with minced eggplant mixed with grated cheese. Hope this helps.

make sure they are very well dried out after you wash them.

Make sure they are dry before you start and make sure the Mushrooms are not filled with a watery filling; I would put them in a pan and cook them in a little olive oil and wine. This will keep them from being watery because wine has alcohol. Not too much because it will ruin the mushrooms. You can cover the pan till the cheese melts but let the moisture out right away by uncovering it. This way you can see what you are doing. Ovens are overkill for Mushrooms.

I always stuff mine and cook them until done, then I put the cheese on and melt it( I use Monterey Jack)for a couple more minutes in the oven.
