Does anyone know any healthy foods that are fun to make and delicious to eat?!
~~fruit crisps and crumbles
~~tossed salad full of fresh and different stuff (celery, radishes, craisins, raisins, hearts of palm & artichoke, avocado, bacon, boiled eggs, you name it!)
~~PNB roll ups: tortilla spread w/ PNB, lay a banana on top, adn roll it up
~~muffins (esp w/ whole wheat flour for fiber, dried fruit for fiber and iron)
~~rice pudding

Hummus is I guess more easy than fun to make and is delicious and useful.
It's fun to make Japanese noodle soups and theyre very easy. Throw in tons of veggies.

I agree with the previous person, fruit kabobs are fun. So are chicken and vegetable kabobs.
Also plain fruit salad with the most exotic fruits you can find is very fun Our last salad had prickley pears, oranges, passion fruit, guava, mangoes and pomegranetes in it. It was the best sald we have had yet
