Question: POTATO CASSEROLE
2 cups mashed potatoes
1/2 cup sour cream
House Seasoning, recipe follows
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons (1 stick) butter
1 1/2 cups grated Cheddar
4 medium potatoes, cooked
6 slices bacon, cooked crisp
Preheat oven to 350 degrees F.
Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sprinkle House Seasoning, to taste. Saute onion and bell pepper in butter; evenly layer over top of sour cream. Slice potatoes and layer over onions and bell peppers. Add butter. Sprinkle House seasoning. Finally top with cheese. Bake for 25 to 30 minutes. Remove from oven and crumble bacon over top.
Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.

1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

I love making hashbrown casserole, and it's easy.

You need a bag of frozen hashbrown potatoes. A container of sour cream. A can of cream of mushroom soup, with two cans of milk. 2 cups of grated cheese (any type). 1/2 an onion diced. Salt, pepper, garlic powder. Corn flake crumbs. 1 stick butter, melted.

Mix together the sour cream, can of soup, two cans of milk, shredded cheese, the onion, and the salt, pepper and garlic powder. Stir in the hasbrowns. If it seems too dry, add more milk, or you can add another can of soup if you wish.

Put this into a 9x13 glass or metal baking dish. Bake in 375 oven for 45 minutes. Take out of oven and sprinkle corn flake crumbs over the entire top, and then pour the melted butter over the corn flake crumbs. Put back in oven and bake another 15 minutes, or until crumbs are crispy and toasted.

This is soooooooooo good! :)

1/2 c. butter (one stick)
1 can of cream of chicken soup
1 c. sour cream
2lb bag of hash browns (thawed)
2 c. shredded cheddar cheese
chopped onion to taste

Preheat oven to 350. Butter a 9x13 inch pan. Heat and mix butter, sour cream, onion and soup in a sauce pan. Put hash browns in the 9x13 pan. Pour soup mixture over hash browns over with cheddar cheese. Bake for one hour or until cheese is browned and bubbly.

Cheesy potato's: (funeral potato's)

3 (12oz) pkg. Frozen Hash browns
1/4 cup butter
1 pt. Sour Cream
1/3 cup chopped Green onions
1 can cream of chicken soup
1 1/2 cup shredded cheese
1/3 cup crushed corn flakes stirred into 2 Tablespoons of melted butter

Melt butter in sauce pan. Add soup and stir until well blended. Add sour cream, onion, grated cheese to soup mixture. Mix well. Stir soup mixture into thawed potato's. Pour into a 8 x 13 dish. Top with corn flakes and bake at 350 for 45 min. Yummy!!

i dont know if it will work for ya, but i love hashbrown casserole.
take a 2lb bag of southern style hashbrowns(thawed)
mix in a bowl with 2 cups of grated cheddar cheese, 1 pint of sour cream, 1 can of cream of chicken soup, 1/2 cup of melted butter, and 1 tablespoon of minced onion. pour into a 9 x 13 pan. top with 1/2 cup crushed corn flakes(mix with some melted butter if you like). sprinkling cheese over the top is optional too.
bake at 350 degrees for 1 hour.

i have not experimented much with adding extras too it, but i think some crumbled bacon might be awesome in there too

Irish Potato Casserole--Handed down to me. Very Good!

INGREDIENTS
2 cups peeled and shredded potatoes
1/2 cup melted butter
2 eggs, beaten
1/2 cup minced onion
3 cloves, chop the garlic
1 teaspoon salt
1/2 teaspoon paprika
1/2 cup milk
1 cup shredded sharp Cheddar cheese



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter a 1.5 quart baking dish.
In a medium bowl, combine the potatoes, butter, eggs, onion, salt and paprika. Mix well.
Place potato mixture into the prepared baking dish and pour milk over top. Bake in the preheated oven for 40 minutes. Sprinkle top with cheese, return to oven and bake until cheese melts and is slightly browned.




Potato Casserole

INGREDIENTS
1 (2 pound) package frozen hash brown potatoes
1/3 cup chopped green onions
3 cloves of garlic chopped
2 cups shredded Cheddar cheese, divided
1 (10.75 ounce) can condensed cream of potato soup
1/4 cup butter
2 cups sour cream
salt and pepper to taste




DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a small pot, heat the soup, butter or margarine and sour cream over low heat.
Combine potatoes, green onion, garlic and 1 cup cheese into a large mixing bowl. Mix in the heated soup mixture. Season with salt and pepper. Pour into a 9x13 inch dish. Sprinkle one cup of cheese over the top of the casserole.
Bake 30 to 45 minutes. Serve warm.




Fancy Potato Casserole

INGREDIENTS
5 large potatoes
1 cup sour cream
2 (8 ounce) packages cream cheese
1 tablespoon garlic powder
2 cups shredded Cheddar cheese



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in a large pot of salted boiling water, bring water back to a boil. Cook until potatoes are tender, approximately 15 to 20 minutes. Drain well. Let cool.
When potatoes are cooled, cut them into small chunks. Using an electric blender, whip potatoes with sour cream, cream cheese and garlic salt. Place mixture in a 9x13 inch casserole dish. Sprinkle with Cheddar cheese.
Bake for 20 minutes. Serve hot.

INGREDIENTS
4 pounds new potatoes, skinned, cut into 1-inch cubes
1 pound processed cheese food, cubed /or sub any melting cheese or velveeta
2 cups mayonnaise
1 onion, finely chopped
1 pound bacon, cooked crisp and chopped


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in a large pan, fill with water to cover potatoes, and bring to a boil. Cook until potatoes are just soft. Drain, place in a large bowl. While the potatoes are still hot, gently stir in cheese without mashing potatoes. Continue to stir, every minute or so, until cheese is melted.
In a separate bowl, stir together mayonnaise, onion, and bacon. Gently stir into potatoes and cheese. Spread into a 13x9-inch baking dish.
Bake in a preheated oven for 50 minutes.

4 cups thinly sliced, pared potatoes
2 cups cooked ham, chopped
1 leek, cleaned and thinly sliced
1 cup sliced onion (1 medium onion)
2 tbsp. flour
1 tsp. diced parsley
1 tsp. diced chives
1 tsp. salt
1/8 tsp. pepper
2-3 tbsp. butter (cut into 8-10 dots)
1 1/2 cups scalded milk
paprika and parsley for sprinkling

Preheat oven to 375°F.
Grease a 2 qt. covered casserole dish. Parboil potato slices over medium heat in unsalted water for 5 minutes. Strain and replace water with cold water to stop cooking process.

In a small bowl, blend together flour, parsley, chives salt and pepper. Strain potatoes.

In the greased casserole dish, create multiple layers of potatoes, onion slices, ham and sprinkling of the dry ingredients in each layer. Dot each layer with some butter, reserving enough potatoes and butter for the top layer.

Sprinkle top with paprika and parsley.

Cover casserole and bake in 375°F oven for 45 minutes covered, then 15 minutes uncovered.

Serves 4-6

Curried!! For a spicy twist add ? teaspoon curry to dry ingredients and omit the chives and paprika!

basic ingredients

potatoes, peeled and sliced thickly
onions, peaeed and sliced thickly
celery, sliced across the stalk thickly
all theabove ingredients sliced the same thickness
spread in layers in a dish, potato on top and add [fresh if you have it] oregano, basil, parsley [if you don't have fresh then give a liberal dash of mixed herbs which are dried] add stock but not too much, perhaps a 1/2 inch just to steam the vegs, I
place in a hot oven for about 1/2 hour, till you can see the vegs are soft, then coat with a mixture of:
cream and cheeses, i.e. sharp chedder [the sharper the better for my taste, but if you like mild cheese thats OK as well, and parmasan and finish the cooking till the cheeses are brown and bubbling

boil and mash about 6 fairly large sweet potatoes...and add a pinch of cinammon and about a tables spoon of brown sugar, and some butter
Put this in a casserole dish
take some marshmallow (the small ones for hot cocoa). and put them on top..it should cover the majority of the top...and then add more brown sugar to the top

this isnt a dessert, but really is a side dish
