There is no good way to fix egg noodles.

If they're broken just throw them out and buy a new bag. They're only $1.29 a bag.

In chicken broth. With some potatoes and pieces of carrots and celery.

They are homemade egg noodles--right?

Chicken Egg Noodles Alfredo

This is a family favorite. A creamy, cheesy Alfredo dish, great with a salad and garlic bread.

INGREDIENTS
6 skinless, boneless chicken breast halves - cut into cubes
6 tablespoons butter, divided
4 cloves garlic, minced, divided
1 tablespoon Italian seasoning
1 pound egg noodle
1 onion, diced
1 (8 ounce) package sliced mushrooms
1/3 cup all-purpose flour
1 tablespoon salt
3/4 teaspoon ground white pepper
3 cups milk
1 cup half-and-half
3/4 cup grated Parmesan cheese
8 ounces shredded Colby-Monterey Jack cheese
3 roma (plum) tomatoes, diced
1/2 cup sour cream

DIRECTIONS
In a large skillet over medium heat combine chicken, 2 tablespoons butter, garlic and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.
Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
Meanwhile, melt 4 tablespoons butter in the skillet. Saute onion, 2 tablespoons garlic and mushrooms until onions are transparent. Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy. Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, tomatoes and sour cream. Serve over cooked noodles.

Here's a recipe I used 2 days ago using egg noodles
You'll need:
1 package of egg noodles
1 or 2 pounds of chicken breast
1 package of Kraft Velveeta cheese
1 can of rotel
1 cup of milk

1.) Put a pot of water over the stove top on medium or high heat. Let water still there until it boils. In the meantime, cut chicken breast into bite size pieces. Heat them on a skillet until they turn brown.

2.) Cut the Velveeta cheese in half. On a medium or large pan, put half of the Velveeta cheese in there. Pour the rotel in there as well, just be sure to drain the rotel first. Pour milk. Stir until smooth on medium heat.

3.) If the water is boiling, pour the noodles into the pot and stir.

4.) Put chicken pieces in the cheese/rotel pot.

5.) When noodles are ready, drain the noodles first and pour them in the cheese/rotel pot. Stir it for about 5-8 minutes

Enjoy! If you want it extra spicy, use 2 cans of rotel.

oohh i just made this tonight - and i love this recipe!!!

ham cassoulet

first:
in a frying pan heat 2 tbl butter on medium heat
then sautee:
3 toes of garlic minced (3 small forkfulls of jarred)
1 bunch of chopped green onion
1/2 green pepper chopped

when green pepper starts to get soft add:
1 lb ham thinly sliced into strips - ham from the deli works fine, or leftover ham works too
1 15oz can tomato sauce + 1 8oz can tomato sauce
1TBL sugar or splenda
1 tsp salt
pepper to taste
bring to a simmer on medium then reduce heat to a slow simmer. cover and cook about 20 mins - stir occasionally

now:
whisk together in a small pan:
1 15-16 oz container ricotta
1 egg
1/2 c sour cream
1-2 tsp parsley
1/2 tsp garlic salt, then
mix in about a cup of shredded mozzerella cheese

Then take a big bag of egg noodles and cook them in salted water for the minimum time.
preheat the oven to 350:

while they are cooking take a 13 x 9 casserole pan and butter the bottom and sides (or spray with cooking spray)

when the noodles are finished, drain them and put in the bottom of the casserole pan.
next place the ricotta cheese mix over them, spreading evenly
then pour the ham mixture on top, spread evenly

cover top with about 2 cups shredded cheddar cheese (medium or mild)

pop into the oven. bake @ 350 for about 35-40 minutes

it's Delicious! serve with salad and warm bread or just eat alone.

mmmmmmmm
good.

hope you try it - you will enjoy it

nice and quick!! butter and garlic salt. (cheap and quick)

Make a casserole. Or put them in with meat and veggies that are stir fried

If not adding the egg noodles to a soup or casserole I like them buttered with salt and pepper.

If this is to be a side dish, while the noodles are boiling, saute onions, garlic, green and red peppers in butter and olive oil. Add salt, pepper, basil, oregano and parsley. When the noodles are ready, drain but do not rinse. Put noodles in serving dish, add butter sauce and toss. Add grated parmesan cheese.

To make a meal of this, saute slices of your favorite sausage first - sweet Italian sausages, chorizo, ring baloney, Polish sausage, pepperoni - whatever you have a taste for. Adjust the spices to suit the type of sausage you are using. Other possible additions include sliced mushrooms, carrots, celery, diced tomatoes, broccoli, chopped fresh spinach... With a side salad and warm bread you are ready for a small feast.
Enjoy!

In a chicken soup.

This is easy and fast, good for side dish. Prepare noodles, about 8 ozs. or 1/2 package to package directions and drain. Do not rinse. While noodles are cooking saute 1 package of your favorite stir-fry veggies in butter and minced garlic, I use store-bought in a jar, about 2 or 3 tsps. When crisp tender and to noodles with extra butter to your liking. Serve warm.
