Ramen Noodle Salad Recipe? see details!?!
Answers: Please Help! My mom had this salad at a party, and she got the recipe, although it's not a very clear one. I googled it and found a gazillion variations on it. How do you make yours? Do you toast the ramen noodles? Do you mix the ramen seasoning in with the dressing? Her recipe calls for slaw mix, sunflower seeds, and green onion - what else do you add to yours? And do you let it sit with the dressing or mix it right before serving? I know I can always count on you guys - thanks for your help!
ORIENTAL SALAD
1 pkg. Broccoli slaw (not normal slaw... better taste!)
2 pkg. oriental Ramen noodles (they taste better than other flavors in this)
1 cup toasted almond slices (baked in a single layer on cookie sheet at 350 for 5 min.)
1 cup sunflower seeds
1 bunch scallions (diced)
DRESSING: Mix together- and then set aside in fridge.
1 cup oil
1/2 cup sugar
1/3 cup white vinegar
2 flavor packets from Ramen noodles
Mix and chill slaw and scallions.
Crush noodles and mix with seeds and almonds.
Mix everything together.
Put dressing on and stir when ready to serve. (otherwise, it gets soggy!)
I do it this way...
Dressing Ingredients:
2/3 cups oil
1/2 cup sugar
1/4 cup vinegar
Salad Ingredients:
1 pkg. cole slaw mix
2 bunches of green onions (chopped)
1 cup sliced almonds
1 cup sunflower seeds
2 pkg. chicken ramen noodles (broken up, with seasoning)
Mix dressing ingredients and let sit overnight, do not refrigerate. The next day… Mix salad ingredients. Add dressing and toss. Let stand for a few hours.
EDIT: I'd mix the dry ramen noodle favor packet powder with the dressing first. Then add the rest of the stuff.
I'm not sure of the whole recipe, but I've done the noodles before. Melt a little butter in a non-stick fry pan. Add the seasoning mix and stir until blended. Break up the noodles and add them to pan. Toast until they are lightly browned, stirring often. Let cool.
This is a fab salad. My version is pretty similar to Clare's with a few differences:
1. we use the beef ramen
2. put the seasoning in the dressing
3. I don't put the dressing on until just before service
4. we get the packaged cole slaw without carrots, just the cabbage
5. we toast the seeds and nuts a bit before mixing with the cabbage and noodles
I use bok choy. It's a Chinese cabbage and it's very mild. Of course, you have to chop yourself, but it is really wonderful!
I love all of the Ramen Noodle combinations except the "beef flavored" one. I eat these noodles when I want a "quick" meal without the bother. I never make anything fancy out of Ramen Noodle.
