What are some other ways to serve Udon Noodles besides in soup?!


Question: Udon stirfry
you will need: udon noodles, brocolli cut into florets, 1 egg, 2 tbs of water, 2 tbs of oil (olive oil or canola oil), 1 small yellow onion chopped, 1 stalk of spring onions chopped, 2 small cloves of garlic minced, 3 slices of ham chopped, 2 tbs of hoison sauce, 1 tbs oyster sauce, 1/2 tbs of dark thick, sweet soysauce (optional), 1/2 tps of black pepper, 2 tbs of mirin or rice wine (optional), 1/2 tsp of sesame oil

1. Partially cook broccoli and udon in salted boiling water for a few minutes; drain and reserve 1/4 cup of the water.

2. Beat the egg with 2 TB water and a pinch of salt

3. Heat 1 TB of oil in a wok; when hot, pour the egg in and cook until set; remove and set aside.

4. Heat remaining 1 TB oil in the same wok over high heat; when hot, saute the onions until soft.

5. Add garlic and saute for 30 sec

6. Add ham slivers and saute for another 30 sec.

7. Stir in udon noodles

8. Add hoisin, oyster, soy sauces, white pepper, wine, chilli flakes; saute for 1 minute.

9. Adjust heat to medium-low, add broccoli and reserved cooking water, cook for another minute.

10. Taste and adjust seasonings if necessary

11. Add the cooked egg to the noodles, breaking it into pieces as you stir.

12. Stir in sesame oil.

If your Udon noodles are those dry kind like found in Top Ramen, you can crumble them in a nice shredded cabbage salad with chicken, green onion and toasted sesame seed with a dressing made with sesame oil, sugar, cider vinegar, salt and pepper

You can also soften them and mix them into a stir-fry.
