Is there a healthy recipe I can make with canned mixed veggies?!

Shepherd's Pie
1 1/2 lbs ground beef
2 eggs, beaten
1 tablespoon worcestershire sauce
salt and pepper
1 medium onion, chopped (aprox 1/2 cup)
2 tablespoons butter
2 (16 ounce) cans mixed vegetables, undrained
1 (6 ounce) can tomato paste
2 cups prepared mashed potatoes
1/2 cup grated cheddar cheese
1/2 teaspoon garlic powder
Directions
Combine beef with eggs, worchestershire sauce, salt, pepper, garlic powder, and onion. Melt butter in skillet and cook beef mixture in butter until browned. Add vegetables and tomato paste to meat. Put in casserole dish and bake at 325 degrees for 1 hour. Remove and place potatoes and cheese on top of dish, continue baking until cheese is melted.
Simple Chicken Pot Pie
1 package pie crusts (1 for top, 1 for bottom)
1 (10 ounce) can white meat chicken, drained
1 (10 3/4 ounce) can cream of chicken soup, with herbs
2 (15 ounce) cans mixed vegetables, drained
1/4 cup milk
Directions
Allow pie crusts to sit at room temperature 15-20 minutes.
(Or microwave on defrost for 1 minute). Preheat oven to 350 degrees. Place bottom pie crust in 8-9 inch pie pan. Stir chicken, vegetables and soup until mixed well. Spread evenly into pie shell. Cover with top pie crust and flute the edges or pinch together with a fork to connect top and bottom crusts. Make a small hole in the very center of the top crust and make four 1/2 inch slits around the hole, evenly spaced. Bake for 30 minutes or until crust is brown and filling is warmed through. Lower temperature to 325 degrees and bake an additional 15 minutes.
Goulash
1 lb ground beef or ground turkey or ground chicken
1/2 cup chopped onion
2 (15 ounce) cans mixed vegetables
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1/2-3/4 cup small elbow macaroni (or use 3-4 potatoes, diced in place of the noodles)
3/4 cup water
salt and pepper
Directions
In a stew or dutch-oven pot, saute meat and chopped onions until brown. Drain the grease and return to same pot. Add all of the remaining ingredients to the meat and onion. Stir and bring to boil. Turn down to medium-low and simmer 20 minutes or until noodles (or potatoes) are done. Stir occasionally to keep from sticking to bottom of pot.

Brown meat, drain, add veggies and gravy, spead in casorole dish, spread mashed potatoes on top, brush with butter sprinkle with parmesan cheese broil until brown

INGREDIENTS
2 (15 ounce) cans mixed vegetables, drained
1 small onion, diced
1 (10.75 ounce) can condensed cream of chicken soup
1 cup mayonnaise (Low-fat sour cream can be substituted)
1 cup shredded white Cheddar cheese
36 buttery round crackers, crushed
DIRECTIONS
Preheat oven to 350 degrees F
In a medium bowl combine the mixed vegetables, onion, soup, mayonnaise or sour cream and cheese. Mix well and spread mixture into a 9x13 inch baking dish. Top with the cracker crumbs.
Bake about 30 minutes, or until browned and bubbly.
Make some rice or noodles, cut up the meat, add the mixed veggies and a can of creamed soup (cream of chicken, broccoli, asparagus, etc.) mix it all together and put it in the oven at 350 degrees for about 1/2 hour.
i agree with all the recipes above but you are way better offf using frozen veges because they have way less sodium, but if that is all you have rinse the can veges well to get rid of some of the sodium
