Leftover greens and black eyed peas?!

Paula Dean took them and drained the greens well, drained the black-eyed peas and added salt and pepper and chopped ham, flour and corn starch and made fritters with them. She dropped them by spoonfuls in oil and they came out looking like little fritters. She had a sauce she topped them with and I can't remember what it was. Check her site on foodnetwork.com.
cook some rice and mix them all together maybe take a roasted chicken and chop up the meat and add it to the mix
