6-8 med. potatoes
3 tbsp. butter
3 tbsp. all-purpose flour
1 tsp. salt
1/2 tsp. pepper
2 1/2 c. milk
1 sm. onion, chopped
1 tbsp. butter
1-1 1/2 lb. cubed ham or sliced just cut up in smaller pieces

Wash and peel (optional) potatoes and cut into enough thin slices to measure about 4 cups. Heat 3 tablespoons butter/butter in saucepan over low heat until melted; stir in flour, salt and pepper. Cover over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat; stir in milk. Heat to boiling again, stirring constantly; boil and stir about 1 minute.
Arrange potatoes in greased 2 quart casserole in layers, topping each layer with desired amount of onion, white sauce and cubed ham. Dot top layer with 1 tablespoon butter. Cover and bake in 325 degree oven for 40 minutes, or in 350 degree oven for 30 minutes. Uncover and bake until potatoes are tender, 60-70 minutes longer. Let stand 5-10 minutes before serving.

Make a strata which is a type of breakfast casserole

Add ham if you want, to make a hearty brunch casserole.
INGREDIENTS:
8 thin slices bread
4 slices American process cheese
1 can (15 ounces) asparagus pieces or spears
4 thin slices ham, optional
4 eggs
2 cups milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon Pepper
shredded Cheddar or American cheese
PREPARATION:
Place 4 slices of bread, with crusts removed, into buttered 8-inch square baking pan. Put slice of cheese on each piece of bread, then place asparagus evenly on top of cheese slices. If desired, add a thin slice of ham to each slice of bread.

Top each with another slice of bread. Mix egg, milk, salt, pepper, and mustard; pour over bread. Let refrigerate overnight. Sprinkle top with additional grated cheese and bake at 350 degrees for 45 minutes, or until knife comes out clean when inserted near center.

Serves 4.

You bet just dice it up and make your hash.

Or freeze and pull it out in a month or so when your not sick of eatin ham.

You can use it in everything, but my favorite is macaroni salad and 15 bean soup. We had the 15 bean soup last night, it was fabulous!

I usually just make into ham salad - just substiting the ham into your favorite tuna salad recipe. I just bone the ham, put the meat into the food processor with mayo, some mustard, pickles, black pepper, maybe some garlic or any other spices or veggies that you like. It will help make a little bit of ham that you might not be able to serve go a long way. Just put on a couple slices of bread with some swiss or cheddar - you can even grill it for a nice hot sandwich and maybe serve with some soup.
