I have about 1 cup of chopped chicken breast?!

Question: I don't want to put it in spaghetti b/c we just had that. Mexican is out as Hubby doesn't care for it. Any ideas on what to do with it?

Thanks!

Whenever I have left over chicken breast, I make chicken curry. Cut up some onion, and stir fry it with the chicken and add peas and carrots and whatever other veggies you want. Add 2 cups of water, simmer until the chicken is tender and add the curry mix. It works great over rice or noodles.

put it in a salad

Mix it with some frozen or fresh broccoli, a can of cream of chicken soup and some cheddar cheese, put in a casserole and top with bread crumbs and extra cheese, cover with foil. Bake for 35 min or so then take foil off and bake 10-15 more until top is golden brown and cheese is melted.

Chop up some onions and get some italian dressing and cook them up together really really good! just make sure u cook the chicken before adding the onions!

mix it up with some veggies, put it all in a casserole dish, add some cream of chicken or cream of mushroom soup, put some stuffing over the top and put it in the oven at 400 for 30 minutes, instant chicken pot pie!!

put it in a salad and have some italian dressing on it, mmm that sounds good

Make chicken salad sandwiches! MmmM

Put it in BBQ sauce, fry potatoes and throw it in with some onions & cheese, make chicken salad, make stir fry with it, put it in a regular salad, make chicken pizza bread

You can mix in some chopped onion, celery, and one well beaten egg, and some bread crumbs or cracker crumbs.. Form into patties and fry lightly. Makes good sandwiches.

Drizzle some extra virgin olive oil stock pot. Chop 1/2 onion and saute until transparent. Chop up 1/4 cup cilantro; add to onion. Chop up left over veggies from the fridge and add to the mix. Add chicken and heat through. Add enough water to make the amount of soup you want. Enjoy!

Put it in a delicious bin and become a vegetarian. (Just for an hour or so, until you realise how very, very boring that actually is.)

Chicken with veggies of your choice and some cream of chicken or cream of celery soup. Once done, stove top or oven, drop your favorite biscuit recipe on top and cook uncovered 10 minutes and covered another 10. Easy chicken and dumplings.

try curry and mushroom soup over rice . Kids used to call itchicken and green gravy.

Chicken salad sandwich, lettuce and tomato. Then later for a snack you can have it with crackers.

mix it with rice

Make Chicken Stew by adding tomato sauce and or stewed tomatoes, seasoning salt, and garlic salt, mixed vegetables, diced potatoes, sweet cut corn, and if you like it spicy for those cold winter days or nights, add cayenne pepper. It's really great with corn bread on the side.

Put it in a salad

or something i did the other day..
saute chicken with onions and vege's
layered it with some mashed potatoes... came out like shepards pie..only with turkey(thanksgiving leftovers) meat. yummy

My family loves this, although we don't have it often:

Chicken Burgers

1 cup cut-up cooked chicken
2 cups shredded cheddar cheese
Mayonnaise
Grated onion to taste
Hamburger buns
Butter
Salt and pepper

Combine the chicken, cheese, and onion with enough mayonnaise to bind. Butter the hamburger buns and fill with the chicken mixture (1-1 1/2 inches thick). Sprinkle with salt and pepper, and cover with the top buns. Wrap in aluminum foil and bake at 350 degrees for 1/2 hour, or until the cheese is melted. Rich and yummy.

Chicken Pot Pie
