Why is my bread raw in the middle?!


Question: I started baking pumpkin bread at about 7:00 pm, and now it's 9:00 pm and it's still doughy in the middle. The top is looking rather brown so I covered it with foil. The bottom and sides are all tough, too. I was baking it at 350 just like it said in the recipe. I'm using a glass pan, but I use it for banana bread and it turns out fine. What am I doing wrong?

I dont think you are doing anything wrong. Pumpkin bread, like banana, and zucchini bread are quick breads. It sounds like you oven has broken and the oven, thermostat or something else broke to make your oven function properly. To be sure buy a oven thermometer and place it inside your oven and turn on the oven set to 350 degrees. when the heat turns off it should read about 375 and turns on at no less than 325 to keep an average temperature of 350 degrees.
Sorry to hear the bad news about your bread.

Then either you used too much yeast (which makes the bread puff up too much and take longer to bake thoroughly), or there's something wrong with your oven's thermostat and it's not getting hot enough.

Wow....Bad recipe.Did you forget some of the flour?Sorry that happened..........................


Try this..................
This bread is really moist.I add raisins at times.
PUMPKIN BREAD WITH ORANGE SAUCE


3 1/2 cups flour
3 cups sugar
2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1 tsp allspice
2 cups pumpkin
1 cup vegetable oil
4 eggs, lightly beaten
2/3 cup water
1 1/2 cups chopped pecans
Orange Sauce (recipe follows)

Preheat oven to 350 degrees F. Lightly grease 2 (9x5-inch) loaf pans

In large bowl, combine flour, sugar, baking soda, salt, spices. Add pumpkin, oil, eggs, and water, beating until well blended. Stir in pecans. Pour into prepared loaf pans.

Bake 1 hour or until toothpick comes out clean. Remove from pans and cool on wire racks. (Serve with orange sauce.)

ORANGE SAUCE

juice of one orange
1 Tbsp lemon juice
1 cup water
1/2 cup granulated sugar
3 Tbsp cornstarch
grated rind of one orange
1 egg, lightly beaten
1 tsp butter or margarine

In medium micro-proof bowl, combine juices and water. Add sugar and cornstarch, stirring to dissolve. Stir in rind, egg and butter. Microwave on high 5 minutes, or until mixture boils and thickens. Allow to cool store in airtight container in reefer. Serve warm or cold.
