This is, supposedly, the original Key Lime Pie recipe. Whether it is or not, I have no idea.
Ingredients:
6 egg yolks
1 can sweetened condensed milk
1/2 c. key lime juice
9-inch baked pie shell
6 egg whites (stiff)
4 tbsp. sugar
Directions:
Combine egg yolks and condensed milk. Mix 8 minutes. Add lime juice; mix 1 minute. Blend well. Turn into baked pie shell. Beat egg whites until stiff peaks form. Gradually add sugar. Swirl onto pie, spreading all around. Bake in 300 degree oven until meringue is pale honey colored.
key lime is supposed to be sour and sweet. 1 can sweetened condensed milk. 1/2 cup key lime juice and 4 egg yokes. nothing more nothing less. Bake at 325 until it sets.
This is my simple recipe of key lime pie.
I can sweetened condensed milk (not evaporated)
1/3 cup reconstituted lime juice
1 packaged graham cracker crust
1 8-oz carton Cool Whip
Fresh lime slices (optional)
Mix the condensed milk with the lime juice and stir until the color changes--2 or 3 minutes.
Pour into the crust and spread the Cool Whip over the top.
You can garnish with slices of lime twists if desired.
Refrigerate for 1 hour and you're good to go!
INGREDIENTS
2 cups vanilla wafers
1 cup slivered almonds
1/3 cup real butter, melted
2 (3 ounce) packages cream cheese, softened
1/4 cup real butter, softened
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
1/3 cup lime juice
clear plastic wrap
DIRECTIONS
In food processor bowl, add vanilla wafers and process until ground. Add almonds; process coarsely ground. Transfer to a large bowl; add 1/3 cup melted butter and stir well. Press crumb mixture on bottom and up sides of a 9-inch pie plate. Bake at 350 degrees for 10 minutes or until lightly browned; cool.
In clean food processor bowl, add cream cheese and remaining 1/4 cup butter. Cover and process until fluffy, scraping sides of bowl as necessary. Add condensed milk and lime juice; cover and process until blended, scraping bowl as necessary.
Pour mixture into pie plate; cover with plastic wrap and refrigerate at least 4 hours. Garnish if desired.
