How can I incorporate this shrimp recipe into a pasta dish?!


Question: So the shrimp recipe is delicious..with cherry tomatoes and parsley...the sauce always comes out a little thin..

how can i thicken it? would it be a good idea to have the sauce thickened and then serve it over penne pasta?

Heres the recipe:

1 lb shrimp
2 tsp olive oil
1 lb cherry tomateoes
6 tbs butter
parsley
green onions

Then what you basically do is cook the shrimp and tomatoes first then add everything else and let simmer a little

I'd boil some linguine to add to the shrimp and the sauce. Add a little pasta water, which is starchy from cooking the pasta, to help thicken the sauce a little. I wouldn't think you'd want it really thick and heavy, though.

Cook the pasta; drain it and toss it in the pan with the shrimp.

Half the cherry tomatoes and put in sauce pan w/ olive oil, 1/2 stick butter, salt pepper, and maybe a squirt of lemon juice. You can thicken it by whisking in a little cornstarch perhaps or making a rue of flour and water. I think capers would be an excellent addition to the sauce as well. Maybe some garlic too :) Also the longer it simmers, the more it will reduce and get thicker. Even a little heavy cream would give it a nice creamy consistency.

make a sauce with the olive oil, parsley, and green onions. Add the shrimp to that.

If you change out your cherry tomatoes for Roma tomatoes and remove the seeds and center, that will take care of your watery problem. Otherwise, use a little cornstarch to thicken. Another thing that would thicken it would be to add a little shredded Parmesan. Then you wouldn't need the cornstarch. Be sure and add it at the end.
