Country Pumpkin Muffins
INGREDIENTS
2 cups sugar
1/2 cup vegetable oil
3 eggs
1 1/2 cups canned pumpkin
1/2 cup water
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cloves
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon salt
1 1/2 cups raisins
1 cup chopped walnuts
DIRECTIONS
In a large mixing bowl, beat sugar, oil, eggs, pumpkin and water. Combine flour, baking powder, soda, spices and salt. Add to pumpkin mixture; blend well. Fold in raisins and walnuts. Spoon into greased muffin tins, filling 3/4 full. Bake at 400 degrees F for 15 minutes.

Blueberry Pumpkin Muffins
INGREDIENTS
3/4 cup all-purpose flour
3/4 cup quick cooking oats
2/3 cup white sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 cup canned pumpkin
1/2 cup milk
1 egg
1/4 cup butter, melted
3/4 cup fresh blueberries or frozen blueberries, thawed
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners.
Mix the flour, oats, sugar, baking powder, salt, cinnamon, and nutmeg together in a mixing bowl until evenly blended. In a separate bowl, stir together the pumpkin, milk, egg, and butter. Gradually stir in the flour mixture, just until all ingredients are moistened. Fold in the blueberries. Spoon batter into muffin cups, filling to the top.
Bake in preheated oven until tops spring back when lightly pressed, about 20 minutes.

Go to your closest supermarket and get mixtures for all your best flavours.... it costs less the amount you'd spend on the ingrediants yourself, and it takes like 5mins preperation time and 30mins oven!

Change to: muffins US Metric
2 cups all-purpose flour
1/3 cup light-brown sugar, packed
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter, melted and cooled
2 eggs, lightly beaten
1 teaspoon vanilla
1 (11 1/2 ounce) package milk chocolate chips
1/2 cup walnuts or pecans, chopped
1.Preheat oven to 400 F.
2.Grease twelve muffin cups.
3.In a large bowl, stir together flour, sugars, baking powder, and salt.
4.In another bowl, stir together milk, eggs, butter, and vanilla until blended.
5.Make a well in center of dry ingredients.
6.Add milk mixture and stir just to combine.
7.Stir in chocolate chips and nuts.
8.Spoon batter into prepared muffin cups.
9.Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
10.Remove muffin tin to wire rack.
11.Cool for 5 minutes.
12.Remove from tins to finish cooling.
13.Serve warm or completely cool.
14.Eat up.

I have made the Peaches & Cream Muffins and they are to die for! All of the recipes are from popular Bed & Breakfasts across the country. There are at least 11 different pumpkin ones. Cool thing is every recipe lists the inn that serves it, and tells you where it is, and also gives you other recipes submitted by that inn.
For example, the Cranberry Pumpkin muffins are from the Blue Mountain Mist Country Inn and Cottages in Tennessee. Their other recipes are for Pumpkin Pie Cake, Strawberry Stuffed French Toast, and Norman's Puffed Pastry Chicken. Doesn't that make you want to go stay there???

PUMPKIN MUFFINS
3 1/3 c. flour
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground ginger
Mix dry ingredients and add:
1 c. oil
4 eggs
2/3 c. water
2 c. pumpkin
Preheat oven to 350F degrees.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.
Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.
Frosting:
CREAM CHEESE FROSTING
1/2 c. butter
1 small package cream cheese
1 tsp. vanilla
1 lb. confectioners sugar
Combine butter, cream cheese, and vanilla. Beat until smooth.
Gradually add the sugar, while beating well.
If mixture is too thick to spread, thin to a spreadable consistency by adding a small amount of milk.

EASY MUFFINS
2 c. flour
1 c. milk
2 tbsp. mayonnaise
Mix all ingredients together. Pour 2/3 full into greased muffin pans. Bake at 350 degrees until brown. Easy to make.
Frosting:
CREAMY ORANGE ICING
2 tbsp. orange juice
1/4 c. granulated sugar
2 1/3 c. sifted confectioners sugar
1 egg
1/2 c. shortening
1 tbsp. grated orange rind
Mix confectioners sugar and egg thoroughly. Bring orange juice and granulated sugar to boil; boil 1 minute. Add to sugar and egg mixture; blend well. Add shortening and orange rind. Beat until creamy.

BLUEBERRY CREAM CHEESE MUFFINS
2 c. whole wheat flour
1 tsp. salt
1/2 tsp. baking soda
1 egg, beaten
3/4 c. honey
2 tbsp. vegetable oil
3/4 c. milk
1 c. fresh or frozen blueberries, thawed & drained
1 (3 oz.) pkg. cream cheese, cut into 16 pieces
Combine flour, baking powder, salt and baking soda. Mix together in a separate bowl egg, honey, oil and milk. Add to dry ingredients. Mix until just moist, fold in berries. Fill greased muffin cups 1/3 full. Place a piece of cream cheese on each cup. Cover with remaining batter. Bake at 400 degrees for 15 to 20 minutes. Serve hot.
Makes 16 muffins.
