Question: Chili Cheese Meatloaf

This spicy meatloaf is made with ground spicy sausage and lean ground beef, chili style seasonings, shredded cheese, and salsa.

INGREDIENTS:
2 eggs, slightly beaten
1 pound ground pork sausage, spicy
1 pound very lean ground beef
1/4 cup chopped onion
1 cup quick-cooking oats
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon of chili flakes
1 cup shredded Cheddar or Monterey Jack cheese
1 cup chunky salsa
salsa for topping, optional
cheese for topping, optional

PREPARATION:
Preheat oven to 350°. With hands, gently combine all ingredients except topping options in a mixing bowl. Shape into a loaf and place in baking dish or loaf pan; bake for 1 to 1 1/2 hours, until cooked through.
Serves 6 to 8.

Bobby Flay's Roasted Vegetable Meatloaf With Balsamic Glaze

3 tablespoons olive oil
1 large zucchini, finely diced
1 red bell pepper, finely diced
1 yellow pepper, finely diced
1 yellow onion, finely diced
salt & freshly ground black pepper
5 garlic cloves, finely chopped
1/4 teaspoon red pepper flakes
2 large eggs, lightly beaten
1 tablespoon finely chopped fresh thyme leaves
1/4 cup chopped fresh parsley leaves
1/2 lb ground pork
1/2 lb ground veal
1 lb ground chuck
1 cup panko (Japanese)
1/2 cup freshly grated romano cheese
1 1/2 cups ketchup, divided
1 cup balsamic vinegar
2 tablespoons balsamic vinegar

Preheat oven to 425 degrees F.
Heat the oil in a large saute pan over high heat.
Add the zucchini, peppers, onion and salt and pepper, to taste, and cook until almost soft, 5 minutes.
Stir in the garlic and 1/4 teaspoon the red pepper flakes and cook for 30 seconds.
Set aside to cool.
Whisk together the eggs and herbs in a large bowl.
Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup and 2 tablespoons of the balsamic vinegar, the vegetables and mix until just combined.
Mold the meatloaf on a baking sheet lined with parchment paper.
Whisk together the remaining ketchup and balsamic vinegar in a small bowl then brush the mixture over the entire loaf.
Bake the meatloaf for approximately 1 to 1 1/4 hours.
Remove from the oven and let rest 10 minutes before slicing.

  • Have you ever tried to stuff one? Basically put a layer of stuffing in the middle of it. I was skeptical the first time I seen her do it. But, man was it good....

    ***********STUFFED MEATLOAF
    2 lbs. ground beef
    Beef Stove Top stuffing mix
    1/2 c. finely chopped green pepper
    1/2 c. celery, chopped
    1 med. onion, chopped
    1/2 tsp. garlic salt
    1 tsp. salt
    1/2 c. grated carrots, optional
    2 eggs, beaten
    3/4 c. bread crumbs
    Prepare Stove Top stuffing according to box directions; set aside. Crumble ground beef in large mixing bowl; add all other ingredients except stuffing. Mix well using hands.
    Place on sheet of foil big enough to wrap meatloaf for baking. Flatten meat mixture out; add stuffing mix on top. Using edge of foil nearest you, begin to roll meat mixture and press together all edges. Now completely wrap loaf with foil. Place in baking dish. Bake at 350 degrees for 2 hours. Remove from oven; let stand 5 minutes before serving.

    *******Long Time Family Meatloaf Recipe
    1 lb. ground beef
    1 egg
    1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
    1 med. onion, chopped
    1 med. green pepper, chopped
    1/2 c. chopped celery
    1 med. apple or pear, chopped
    1 tsp. pepper, black or red
    1 tsp. low sodium salt
    Ketchup or barbecue sauce
    Your favorite cheese
    3 slices bacon (optional)
    Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
    If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
    Remove from oven and allow to cool for a couple of minutes.

    Bill Cosby has a great meatloaf recipe,sorry I don't have it,but try and look it up.I know that he adds chunks of potatoes in it.When I make mine I add potatoes in it.That way you have your meat & taters to.

    Roll your meatloaf mixture out and put layers of ham and provolone in it. Roll it up, put it in pan you are going to bake it in. Bake with some marinara sauce on top.

    1 1/2 pounds lean ground beef
    1/2 pound ground pork
    2 eggs, lightly beaten

    1 package (10 ounces or 1 1/2 cups) frozen peas
    PREPARATION:
    Mix beef and pork together with rolled oats. Mix in eggs, ketchup, mustard, 2 teaspoons salt, and pepper. Shape into a loaf in a shallow greased baking pan large enough for meat loaf and vegetables. Brush with the gravy browning sauce, if using.

    1 pkg. 12 oz. frozen shredded hash browns, thawed
    1 1/2 lb. ground beef
    1 can (8 oz.) tomato sauce

    1/3 c. sour cream
    1/2 c. shredded Swiss cheese

    2 c. chopped carrots
    1/2 c. chopped celery
    1 tbsp. cornstarch
    1 tbsp. butter
    1 tbsp. sugar

    1 c. milk
    2 lb. ground chuck
    2 tbsp. Worcestershire sauce
    2 eggs
    1/4 c. chopped onions

    1/4 c. cider vinegar
    1/2 tbsp. dry mustard

    For the filling: Cook carrots and celery in just enough water to cover and then drain. Use 1/2 cup of the vegetable liquid to make a sauce. Mix cornstarch with a little cold water and then add to the hot liquid to thicken. Add sugar, butter, parsley flakes, and vegetables and set aside.
    Soak bran in milk while you mix together the meat, eggs, 1 tablespoons Worcestershire sauce, onion, salt, and pepper. Add the bran mixture and pat out onto waxed paper. Form into an 8 x 10 inch rectangle and spread the vegetables evenly over the meat. Bring long ends of the meat together, using waxed paper, being sure that all vegetables are tucked in. Place in a greased oblong pan.

    Combine brown sugar, vinegar, 1 tablespoon Worcestershire sauce, and mustard. Put 1/2 of it on the meatloaf and bake at 350 degrees. After 1/2 hour of coking put the rest of the glaze on the meatloaf and bake for 1 hour and 20 minutes, basting occasionally. Let stand for 10 minutes before cutting. Garnish with fresh parsley.     SPICY TURKEY MEAT LOAF

    1/2 c. celery
    4 med. carrots
    2 med. onions
    1 bell pepper
    2/3 c. wild rice
    2 lb. ground turkey meat
    1 1/2 tsp. salt
    1/2 tsp. pepper
    1 egg
    1 tsp. prepared mustard
    1 tsp. garlic salt

    Chop celery, carrots, onions and bell pepper into small pieces. Add turkey, rice, salt, pepper, egg and mustard. Place in loaf pan and bake at 350 degrees for 1 1/4 to 1 1/2 hours.

    BARBECUE SAUCE FOR MEATLOAF:

    3/4 c. ketchup
    2 tbsp. honey or 4 pkg. of Equal
    2 tbsp. Worcestershire sauce
    1 tbsp. lemon juice
    1/2 tsp. hot chili powder
    1/2 c. water

    Combine all ingredients in pan and boil for 1 minute, turn fire down to simmer and cook until liquid is reduced by one third. Serve sauce over meat loaf.

    Salt and pepper
    2 eggs

    STUFFING:

    2 cans mushrooms
    Chopped bell peppers
    Chopped onions
    butter
    6 slices bread
    1 cup of cheese

    Mix meatloaf ingredients. Melt butter and saute mushrooms, celery and onions. Add cubed bread crumbs. Stuffing mixture should be rather dry because fat from meat will add moisture. Layer meat mix, stuffing, then meat mix in loaf pan. Bake at 375 degrees for 1 hour and 15 minutes. SDR

    Try adding Parmesan cheese to your traditional meatloaf. It is amazing in flavor.

    I have seen a few different recipes that I haven't tried. One was wrapped in bacon or prosciutto. The others had boiled eggs in the middle of the loaf or cheese in the middle.
