You can cook it in soups, chilis, or casseroles. You can also eat it raw with a veggie dip, peanut butter, or plain.

You can eat it raw; you can also saute it lightly, or add it to soups or stews. Celery root, or celeriac, is very good pureed.

first when you cut it up be sure to cut across grain. when it has been sliced sweat it (cook in a very little oil at low temp til tender) then you add it to what you want and finish cooking

I eaither eat it raw with ranch dressing, or cook it in a veggie dish...like cabbage soup or a stirfry

cook with roast, eat by itself uncooked mmost of time

only the stem of celery is used. it is eaten raw and form a part of delicious salads....
it is also used as an accompaniement to the bloody mary drink

No one has mentioned the leaves.... the taste is pungent but I sometimes use some of the leaves in my salad for the taste it gives.

Chop the ends off and throw that in a soup base for flavour. Dice it and saute with onions as the beginning for Spanish Rice, Spaghetti Sauce, rice steak, Chili and many other dishes. Eat it raw with Cheez Whiz on it. Chop it up into salads. Dice it into egg or tuna or salmon salad sandwiches. I couldn't cook without my celery.

You can eat it raw with ranch, PB, or alone or you can cook it and put it in a recipe. Most don't eat it cooked alone, rather in a stew or with other veggies. I often pair it with carrots and onions. You can cut it into small pieces or dice it.

Beef or chicken stew in a crock pot or in a pan on the stove:
cut up a chicken breast, celery stick, carrot stick, and onion. Put all into a pot, cover with water, and cook on medium low for 30 minute to one hour (depending on the size of the chicken-just make sure the chicken is cooked through).
If you like it brothy, leave it like that. If you want it thicker..take about one tablespoon of corn starch or 2 tbsp of flour and mix it with some a couple of tbsp of cold water in a small bowl. Once it is completely mixed (no lumps) add it to the stew pot and turn up the heat. Once it boils for a few minutes turn the heat back down. This should thicken it.

If you are putting it in a dish, you probably need to cook it a little. A lot of celery recipes call for sauteed celery. Its yummy! But if you aren't adding it to anything, cut the ends off of it, wash it, and crunch away!
