Alfredo is always the best or maybe a four cheese, or a pesto, I enjoy the white sauce on tortellini. There are a few tomato vodka sauces that are quite good too.
creamy garlic Alfredo
4 tbsp olive oil
4 tbsp butter
1/2 cup finely chopped Sun Dried tomato
2 cloves garlic, smashed
Saute all of the above in the bottom of a pot, then toss in boiled al dente Tortelinis
then add
1/2 cup grated Parmesean cheese,
1 tbsp Basil
1 tbsp Oregano
Toss again
Enjoy !
i would do garlic butter, or a fresh tomato sauce. you take garlic, crushed up, and saute in a little olive oil and a little chicken broth (1/4 cup) with an onion till the onion is soft. then you take some fresh whole tomatoes, wipe them a little, and crush them with your hands into the pan. add a little salt and pepper..enjoy! :)
TORTELLINI IN CREAM SAUCE
3 qts. water
1 tbsp. plus 1/2 tsp. salt
2 lbs. fresh or frozen cheese-stuffed tortellini
2 c. heavy cream
1/8 tsp. hot red pepper sauce, or to taste
Freshly ground white pepper
1 c. freshly grated Parmesan cheese, or more to taste
Heat water in large heavy saucepan over high heat to boiling; add the 1 tablespoon salt. Stir in tortellini; cover and continue to cook over high heat until water returns to a rolling boil. Immediately uncover; stir once; boil until tortellini are almost tender, about 5 minutes. Drain tortellini thoroughly in large colander; spoon onto warmed heatproof serving platter. Cover loosely with foil; place platter in oven set at lowest setting. Heat heavy cream in large skillet over medium heat to boiling. Boil until thickened and slightly reduced, about 5 minutes. Remove from heat. Season with the 1/2 teaspoon salt and hot pepper sauce and pepper to taste. Stir in reserved tortellini; return to medium heat. Cook, stirring gently once or twice, until pasta is tender, 3 to 5 minutes. Remove from heat. Sprinkle with 1 cup Parmesan; stir gently to blend. Spoon onto heated platter and serve with additional Parmesan, if desired.

Well, I make a mean tomato base sauce (mother-in-law is Italian) but I had the most es quite butter sauce on a seafood ravioli - a couple of weeks ago.....fattening but great
- can the spinach unless it is fresh & you want to use a little chopped up for color and some flavoring - try an alfredo sauce and grate a little fresh parmesean/romano on top when you serve ....super cheesy
White sauce with tuna. A great shortcut is Campbell's Cream of Mushroom soup thinned with a little white wine. Add sauteed mushrooms and/or other veggies. Then some drained canned tuna. Top with grated parmesan.
