1.5 times everything, if you want to make that much. Or just set aside a pound of chicken for something else.

Use 150% of the other ingredients. Sometimes it doesn't matter if you increase the other stuff - it depends on the recipe and what the other ingredients are.

well what are you making? why dont you just use the 2 and save the other one.

You can. But sometimes it is not needed.

If you want to cook it all now, multiply the ingredient amount by 1.5, for example....

2 pounds of chicken X 1.5= 3 pounds of chicken
1 tablespoon butter X 1.5 = 1.5 tablespoons butter
and so on.
You aren't doubling it, you are adding 50% more.

The easier way if you aren't a math whiz is to just make the recipe as is with 2 pounds, and freeze the extra pound for another meal.
