Beef Enchiladas (Chicken also works)
1 lb ground beef
1/2 cup chopped onions
2 cups shredded cheddar cheese
1 (20 ounce) can enchilada sauce
8 flour tortillas

Directions
Brown meat and onions in large skillet. Add 1 cup enchilada sauce and 1 cup cheese. Mix well. Put filling along center of each tortilla. Roll up and place seam side down in a 9x13 pan. Pour remaining sauce over. Sprinkle remaining cheese over. Bake at 350 degrees for about 30 minutes till cheese is bubbly.

Spaghetti Pie
1/2 cup melted margarine
1 egg
1 lb grated cheddar cheese
salt and pepper
1 lb cooked spaghetti
1 lb ground beef or turkey
1 medium onion, chopped
1 jar spaghetti sauce
1 cup parmesan cheese

Directions
Mix melted margarine, egg and cheddar cheese, salt and pepper in a bowl. Add cooked spaghetti. Press into a baking pan. Brown meat and onion, drain and add spaghetti sauce.
Pour over noodle crust. Sprinkle with Parmesan. Bake at 350 degrees for 35 minutes.

Onion Pan-Fried Pork Chops
4 pork chops
1-1 1/2 cups all-purpose flour (I am not really sure the amount of the flour, I add 3-4 handfuls)
2 (2 ounce) envelopes onion soup mix
olive oil or vegetable oil (olive oil adds a better taste, but both work)

Directions
With your hands and onion soup mix still in sealed packet crush onions up some what, but you do not want to make them into a powder you just want to break them up. Mix flour and onion soup mix in a shallow bowl. Add enough oil to bottom of a pan that would cover about half way up your pork chop. Heat on medium heat until when you add flour mix to pan it sizzles. Coat each pork chop with flour mixture. Add to pan, about 30 seconds after adding the chops turn over, and cook until done (about 4-5 minute per side for ? to 3/4 inch pork chop).

FAJITA LASAGNA

1 1-lb. box lasagna noodles
2 pkgs. dry Fajita mix
2 lbs. ground chuck
2 pkgs shredded cheese of choice
sliced black olives, optional
green onions, chopped
1 can enchilada sauce
sour cream (optional)
diced tomatoes (optional)

Cook lasagna noodles and drain.

Brown meat and drain off grease; add Fajita mix as directed on back of package.
In a 9x13 baking dish sprayed with cooking spray. Layer noodles, meat sauce, cheese, green onion, olives and Enchilada sauce. Repeat.

Top layer should be cheese.

Bake at 350 degrees for 45 minutes.

Spaghetti - you can use another type of pasta, such as angel hair or penne to make it more interesting. Top it off with fresh grated Parmesan cheese. Bonus points for great big hand made meatballs

Tossed salad or steamed broccoli (you can do this in the microwave, chop it up, put it in a closed microwave-safe container and cook for 3 minutes)

Warm French or Sourdough bread

Italian Sausage with Penne

2 tablespoons olive oil
6 large Italian sausage, cut 1" thick pieces
1 red pepper, seeded & chopped
6 cloves garlic, minced
1/2 cup dry white wine
1 28 oz. can tomato, chopped
1 pound penne
1 tablespoon parsley, dried
1/2 cup Parmesan cheese, grated
1 medium onion, diced

Instructions
Heat oil in a large skillet over medium-high heat and add sausage pieces. Cook until meat is browned and just
cooked through about 5-7 minutes. Remove sausage and set aside.
Add bell pepper, onion, and garlic to he same oil in the skillet. Reduce heat to moderate and cook, stirring
occasionally, until pepper and onion are tender; about 5-6 minutes.
Add wine and sausage and simmer, scraping up brown bits on bottom of skillet, until liquid is reduced by half; about
2 minutes.
Add tomatoes with their juice, parsley, and black pepper and salt to taste, and simmer until sauce is slightly
thickened; about 6 to 8 minutes.
While sauce is cooking, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1/2 cup
pasta-cooking water, then drain pasta in a colander and return to pot. Add sauce and cheese to pasta and toss to coat.

one pot lasagna cook favorite noodles separately drain set as side
in large deep pan brown ground beef or turkey add one medium chopped onion, and grate on carrot and one celery stalk right into the pan add one clove chopped garlic add salt and pepper and 1tsp of Italian seasonings add favorite spaghetti sauce let it cook 10-15 min and add 1 8oz container of ricotta cheese to meat and sauce mixture dump in drained pasta and mix. empty to a deep casserole dish cover with mozzarella cheese bake until cheese is melts at 350* f serve with Italian bread or favorite french bread and a simple salad.

it would help to know generally eating preferences, but chicken is usually okay by all, so...
chicken parmigiana!
4 chicken breasts
1 jar canned sauce--ragu traditional works well for this
1 block mozz...can use part skim or whole; (fat free tastes like rubber).
egg or egg substitute
seasoned breadcrumbs

trim chicken breasts to desired size for serving. use the egg as a wash and then coat in breadcrumbs on both sides. pan fry over medium, turning once so golden brown on both sides. add sauce and top each piece with 1-2 slices mozz. delicious and easy.

Keep it simple okay

Buy some italian sausage and slice a slit down the casing and squeeze the meat out.

Cook this in a deep pan or maybe dutch oven until brown or gray depending on the type of meat.

Add a jar of Pasta Sauce and cook on very low setting stirring and checking occasionally for about 45 minutes. Add a few spices to taste and some pepper. Make sure you stay with spices that go with Italian food. Oregano, basil, rosemary, garlic and thyme.

Cook up the pasta of you choice and serve with garlic bread and a mixed green salad tossed with olive oil, a bit of lemon juice and some fresh ground pepper and a toss of kosher salt to taste.

Tuna Noodle Bake


3-4 servings

1/2 cup onions, chopped
2 tablespoons butter or margarine
1 (10 1/2 ounce) can cream of chicken soup or mushroom soup
1/2 cup milk
2 cups medium noodles or elbow macaroni, cooked
2 cups frozen peas and carrots
1 (7 ounce) can tuna, drained, and flaked
3-4 slices American cheese, as many as you like


Cook noodles according to pkg. directions. Drain well. Set aside.
In a saucepan, cook onion in butter, until tender.
Stir in remaining ingredients.
Pour into a 2 quart shallow baking dish.
Bake at 400, for 20 mins., or until hot.
Top with sliced cheese, if desired.
Bake until cheese melts.

Sorry I am late but it may be ok for next time you have the family over! how about a risotto?

Ingredients
2 tbsp olive oil
1 onion, chopped
350g/12oz arborio rice
150ml/? pint dry white wine
1litre hot vegetable stock
25g/1oz butter
salt and freshly ground black pepper
any vegetables of your choice..cooked peppers mushrooms, tomatoes, etc.

Method
1. Heat the oil in a large, heavy based saucepan and add the onion . Fry over a gentle heat for 2-3 minutes, until softened.
2. Stir in the rice and coat in the oil. Pour in the wine and simmer, stirring, until the liquid has been absorbed. Add a ladleful of the stock and simmer, stirring again, until the liquid has been absorbed. Continue adding the stock in this way, until all the liquid has been absorbed and the rice is plump and tender.
3. Roughly chop the cooked vegetables and stir into the risotto, along with the parsley, butter and salt and pepper.
