Chocolate pear pudding:

The sponge itself does make a little bit of its own sauce, so if you really don't want to make some separately, just serve it with chocolate ice cream.
Ingredients
For the pudding
2 x 415g/14oz cans pear halves in juice, drained
125g/4oz plain flour
25g/1oz cocoa powder
125g/4oz caster sugar
150g/5oz unsalted butter, softened, plus extra for greasing
1 tsp baking powder
? tsp bicarbonate of soda
2 free-range eggs
2 tsp vanilla extract
For the sauce
1 x 170g/6oz can evaporated milk
? tsp instant espresso powder
150ml/5fl oz golden syrup
100g/3?oz dark chocolate, minimum 70 per cent cocoa solids, broken into pieces

Method
1. For the pudding, preheat the oven to 200C/400F/Gas 6 and grease a 22cm/8?in square ovenproof dish with butter.
2. Arrange the pear halves over the base of the dish.
3. Place all the remaining pudding ingredients into a food processor and blend to make a smooth batter with a soft dropping consistency.
4. Spread the batter over the pears in the dish, then transfer to the oven and bake for 30 minutes.
5. Remove the pudding from the oven and let it stand for 5-10 minutes, then cut into slices.
6. For the sauce, place all the sauce ingredients into a small pan and heat gently, stirring frequently, until smooth and well combined.
7. To serve, place the pudding into bowls and pour over the chocolate sauce.

APPLE-PEAR CAKE

2 pears
2-3 apples
1 1/2 c. sugar
3 eggs
2 c. flour
1/2 c. oil
1 1/2 c. milk

Preheat oven to 350 degrees. Grease a large oven-proof bowl; sprinkle 1/4 cup of the sugar in bottom. Remove skin from fruit, slice, then put in bowl. (I like to mix the fruit up, rather than layer it.)
In large mixing bowl, mix 1 1/4 cup sugar and eggs with a spoon. Add flour and mix. Add oil and milk and mix. Pour batter over fruit. Bake for 1 hour 35 minutes. Cool slightly, then invert onto plate.

NOTE: This does not have a typical cake-like texture that we are familiar with, but it is delicious!

RUM MOCHA M&M BROWNIE CAKE

Cake:

1 3/4 cup refined wheat flour
1 3/4 cup unrefined wheat flour
3 tablespoons butter
1 1/2 teaspoon Nescafe instant coffee
1 cup cocoa powder
2 cups fresh thick yoghurt
2 3/4 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 shot of any good dark rum
large handful of assorted nuts or dry fruits (cashews, walnuts, raisins, etc)

Icing:

1 cup grated dark chocolate
1/2 teaspoon unsalted butter
1 teaspoon honey
1 teaspoon rum
some whole milk, for blending
small handful of M&M minis

Baking the Cake:

Combine all dry ingredients of the cake. Mix well. Add the rest of the cake ingredients. Mix well and pour into a well greased pan.
If cooking in an oven, bake at 300-340°F (150-170°C) for about 30 minutes.

If cooking on stove, steam the cake in a large pressure cooker at medium heat for 60-90 minutes.

After the cake is cooked, set it aside for 15 minutes to cool.

Preparing the Icing:

Combine all ingredients in small pan on low heat while adding enough milk to bring it to a thick honey-like consistency. Take it off the heat as soon as it smoothens out. Spread the icing on the cake and garnish with the M&M'S? before it cools.
It is ready to serve as soon as the icing cools and thickens.

Chocolate cake

Ingredients :
125g chocolate
100g butter
125g caster sugar
3 eggs, beaten
60g cornflour
1 tsp baking powder
Chocolate chips, optional

Recipe :
Preheat oven to 180°C (Gas 4).

1. Melt butter and chocolate together gently, over a low heat.
2. Separate eggs, beat, then add to chocolate mixture.
3. Add sugar, baking powder and cornflour, mix well and stir in chocolate chips if using.
4. Pour mixture into a greased 20 cm (8in) cake tin.
5. Cook for 30 minutes in a medium oven.
6. Test the middle with a knife to make sure it is cooked - if knife comes out clean, the cake is done.
7. Leave to cool for 10 minutes, remove from tin and cool on wire rack.
8. Dust with icing sugar to finish.

Advice :
For a sandwich cake, double the quantity and slice in half after cooling, or bake in separate tins. Make a chocolate buttercream filling, and sandwich together.

Try adding cherries or other ingredients for a change.
