What else to serve with a whole rotisserie chicken???!


Question: I am preparing a rotisserie chicken for dinner this evening and I am not sure what else to serve with it? Any suggestions? I was thinking white rice and some sort of veggie. Never made it before so this is kind of an experiment for the family. Your suggestions are greatly appreciated.

Your idea sounds nice (although I prefer brown rice... it has a nice nutty flavor).

Another idea would be roasted potatoes:

* 1 1/2 pounds new potatoes, quartered
* 2 tablespoons olive oil or vegetable oil
* 2 garlic cloves, minced
* 1/2 teaspoon dried rosemary
* 1/2 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
Combine all ingredients in a plastic bag; toss to coat. Pour into an ungreased 13-in. x 9-in. x 2-in. baking pan. Bake, uncovered, at 450 degrees F for 35 minutes or until potatoes are tender.

your suggestion sounds good. i usually serve mine with mashed potatoes, gravy and either corn or green beans. good luck!

Salad with vinaigrette, and some garlic bread.

quartered potatos seasoned with rosemary and thyme salt,pepper and olive oil,bake it in the oven until the potatoes are soft insice

My family loves this side dish with chicken.

**************RICE AND GREEN PEA SIDE DISH
1 c. uncooked long grain rice
2 c. water
1 very sm. onion, chopped
2 c. frozen peas, defrosted
1 carrot, peeled & shredded
1 tsp. chicken bouillon granules
1 tsp. salt free herb seasoning
Salt & pepper to taste
Place all ingredients in a 3 quart saucepan. Cover and bring to a boil. Reduce heat to simmer and continue to cook 15 minutes or until rice is tender. Yield: 6 servings.

Based on my first job at Kenny Rogers Roasters, we had baked beans, green beans, butternut squash, mashed potatoes, corn, garlic/butter red potatoes, steamed veggies (brocolli, cauli, carrots), rice pilaf ... those were the popular ones.

A nice tossed salad, either broasted potatoes or baked. I use Shake & Bake to make my potatoes. Just quarter them, toss it oil ( or butter). Shake in the coating and bake for about 45min.- 1 hour on 350* Makes a nice healthy meal.
