Blackened Tuna
INGREDIENTS

* 1 1/2 pounds fresh tuna steaks, 1 inch thick
* 2 tablespoons Cajun seasoning
* 2 tablespoons olive oil
* 2 tablespoons butter

DIRECTIONS

1. Generously coat tuna with Cajun seasoning.
2. Heat oil and butter in a large skillet over high heat. When oil is nearly smoking, place steaks in pan. Cook on one side for 3 to 4 minutes, or until blackened. Turn steaks, and cook for 3 to 4 minutes, or to desired doneness.

TUNA CASSEROLE

INGREDIENTS

* 3 cups cooked macaroni
* 1 (6 ounce) can tuna, drained
* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 cup shredded Cheddar cheese
* 1 1/2 cups French fried onions
DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a 9x13-inch baking dish, combine the macaroni, tuna, and soup. Mix well, and then top with cheese.
3. Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until bubbly. Sprinkle with fried onions, and bake for another 5 minutes. Serve hot.

Seared Sesame Tuna
INGREDIENTS

* 1/4 cup soy sauce
* 1 tablespoon mirin (Japanese sweet wine)
* 1 tablespoon honey
* 2 tablespoons sesame oil
* 1 tablespoon rice wine vinegar
* 4 (6 ounce) tuna steaks
* 1/2 cup sesame seeds
* wasabi paste
* 1 tablespoon olive oil


DIRECTIONS

1. In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
2. Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.
3. Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.


Tuna Ahi
INGREDIENTS

* 3/4 pound sashimi grade tuna steak, diced
* 1/2 cup diced cucumber
* 1 avocados - peeled, pitted and diced
* 1/4 cup chopped green onion
* 1 1/2 teaspoons red pepper flakes
* 1 tablespoon toasted sesame seeds
* 1 1/2 teaspoons lemon juice
* 2 teaspoons sesame oil
* 1/2 cup soy sauce

DIRECTIONS

1. In a medium bowl, combine the tuna, cucumber, avocado, green onion, red pepper flakes and sesame seeds. Pour in the lemon juice, sesame oil and soy sauce, and stir carefully to blend so as not to mash the avocado. Place this bowl into a larger bowl that has been filled with ice. Chill in the refrigerator for 15 minutes, but no longer - the terrific freshness of the fish will be lost.
2. Once chilled, remove the bowl from the ice, and invert onto a serving plate. Serve with toasted bread or your favorite crackers.

To toast sesame seeds

Heat a dry skillet over medium heat. Add sesame seeds, and cook until toasted and fragrant, about 3 minutes. Stir often to prevent burning.

* 1 (6 ounce) can tuna, drained and flaked
* 1 (8 ounce) package cream cheese, softened
* 3/4 cup chopped pecans
* 1/4 cup chopped onion

DIRECTIONS

1. In a medium bowl, blend tuna, cream cheese, 1/2 the pecans and onion. Shape into a ball or loaf. coat with remaining pecans. Refrigerate until serving.

Tuna burgers!!

INGREDIENTS

* 1 (6 ounce) can tuna, drained
* 1 egg
* 1/2 cup Italian seasoned bread crumbs
* 1/3 cup minced onion
* 1/4 cup minced celery
* 1/4 cup minced red bell pepper
* 1/4 cup mayonnaise
* 2 tablespoons chili sauce
* 1/2 teaspoon dried dill weed
* 1/4 teaspoon salt
* 1/8 teaspoon ground black pepper
* 1 dash hot pepper sauce
* 1 dash Worcestershire sauce
* 4 hamburger buns
* 1 tomato, sliced
* 4 leaves of lettuce (optional)

DIRECTIONS

1. Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
2. Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
3. Serve on buns with tomato slices and lettuce leaves, if desired.

If it is canned tuna i make a good tuna casserole if it is a fresh tuna i make ina gartens tuna tartare and i also make a tuna salad with grilled tuna it is wonderful... but since our fresh tuna is so much i make tuna casserole once a month infact that is what we are having now for dinner...

i made tuna pasta last night & it was gorgeous.

i used 1 tin of tuna, and mixed this with 4 teaspoons of mayo.
i sauteed 2 red onions, one yellow pepper & one red pepper with 2 cloves of garlic.

i mixed this with little pasta bows & we had a couple of slices of garlic bread with it.

you should try it - it was wonderful! :)

Canned tuna: Tuna ala king, tuna omelet, salad with boiled potatoes, olives and green beans. Tuna cakes: drain the tuna, mix well with breadcrumbs, minced onion, salt and pepper andone eggs. fry in little patties and serve in sandwiches or as a side dish, with tartar sauce.

Tuna with your favourite pasta sauce. Tuna works well as a meat substitute.
