I own a gt xpress 101. can any onew tell me what 'corn muffin mix' and 'baking mix' is please.!
Answers: i have found te muffin mix on ebay but only from usa. and whenthe recipe calls for half cup of baking mix, i have no idea what they mean.
Baking mix is usually referred to as "Bisquik," which is a brand-name. You can make your own like this:
4 ? c sifted flour
2 Tbsp sugar
1 Tbsp + 1 ? tsp baking powder
1 c shortening
? tsp salt
2/3 c powdered milk
Stir together flour, baking powder, salt, and sugar. Sift together 2-3 times in a large bowl. Cut in shortening with pastry blender or two knives until the mixture is similar to cornmeal. Add dry milk. Use in recipes that call for Bisquick or all-purpose mix.
You can also make your own corn muffin mix like this:
Ingredients:
2/3 cup all purpose flour
1/2 cup yellow corn meal
3 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
JIFFY CORN MUFFIN MIX
Yields 8 to 10 muffins depending on size.
Preheat oven to 400 F.
Grease muffin pans, or use paper baking cups. 1 egg 1/3 c. milk
1. Blend ingredients. Batter will be slightly lumpy. (For maximum crown on muffins let batter rest for 3 to 4 minutes before filling cups.)

In a large pan, stir the dry milk, baking powder, sugar and salt into the flour; mix thoroughly.
Cut the shortening into the dry ingredients until the mix is the consistency of corn meal.
Place the mix in a covered glass or plastic container and keep in a cool, dry place.
In warm weather the mix should be refrigerated.
Use within a month.
To measure, pile the mix lightly into a cup and level off with a spatula or the back of a knife
The first person is right, in the UK it would be any instant scone type mix and I own one myself, I am a former chef from Canada, and for cornmeal it might be available in either Jamaican or Africa grocery stores.
I worked in Jamaica and they use it for Johnnycake a corn based bread/scone like bread, as for Jiffy mix it is a US prepackage mix, not available out side the USA.
Even a health food or natural food store may have cornmeal, if you can find it sometime it is fine like semolina or coarse like scottish oatmeal. They both work the muffins or the corndog in the book will be a bit drier and a bit more crumbley.
