EASY SEAFOOD PIE
1 package (6 ounces) frozen ready-to-serve crabmeat, thawed and drained, or 1 package (5 ounces) frozen cooked salad shrimp, thawed and drained
1 cup shredded sharp natural Cheddar cheese (4 ounces)
1 package (3 ounces) cream cheese, cut into 1/4-inch cubes
1/4 cup sliced green onion
1 jar (2 ounces) diced pimientos, drained, if desired
1/2 cup Original Bisquick? mix
1 cup milk
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
2 eggs
1. Heat oven to 400°F. Grease pie plate, 9x1 1/4 inches. Mix crabmeat, cheeses, onions and pimientos in pie plate.
2. Stir remaining ingredients in bowl with fork until blended. Pour into pie plate.
3. Bake uncovered 35 to 40 minutes or until golden brown and knife inserted in center comes out clean (some cream cheese may stick to knife). Let stand 10 minutes before cutting.

1/2 cup mayonnaise
2 tablespoons all-purpose flour
2 eggs, beaten
1/2 cup milk
1 cup crab meat
1 cup diced Swiss cheese
1/2 cup chopped green onions
1 (9 inch) unbaked pie crust


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, beat together eggs, mayonnaise, flour, and milk until thoroughly blended. Stir in crab, cheese, and onion. Spread into pie shell.
Bake for 40 to 45 minutes, or until a knife inserted in the center comes out clean.

Hi- well, from the Clam Town of the US-Tuckerton, West Creek, NJ -all of us that grew up here for generations, make a very strong tasting "Clam Pie". Basically you make a good homemade crust to fit your pan- depending how many you want to feed- we use a good 50 for one 9x13 - anything from a regular deep dish pie plate to a 9x13 or larger enough for bottom and top crust. Wash the unopened clams to remove most dirt etc., open them over a large bowl to save the juices also. Meanwhile have fresh potatoes peeled and diced small about equal quantity to amount of clams- cook them in lightly salted water till cooked but not mushy. Drain- save water - Grind your clams not too tiny - put drained clam juice in pan and thicken -add UNcooked ground clams, potatoes- add your pepper, thyme, check for salt and place in pie crust. add top crust and bake untill crust is brown and crispy. This is for the real clam lovers !

Another assorted seafood pie can be made similar to above but throw in an assortment of fresh uncooked shrimp cut in large pieces, chopped clams, and a fish of your choice in large chunks- make a thickened white sauce with the mixed seafood juices and milk- and butter -add a shaker of old bay- with same type diced precooked potatoes- fill crust- can add top crust or try shredded cheese- bake till done. If you want to make this different omit the crusts completely- pour mixture in greased pan and ad spoonfuls of cornbread batter on top. Cook till done. All great with the standard homemade baked beans, cole slaw etc...enjoy
