Whats the hardest food to make?!
Working with molten sugar, to say, make a sugar cage out of for a dessert........tricky and dangerous........
Baking intricate desserts, even though I'm professionally trained, I still have my disasters (and I admit it!!!)
those are the three that still stump me~

as a pro chef i've cooked many dishes over the years. But for me the hardest dishes have always been highly finessed chocolate deserts. dishes such as marquis de chocolat or even pulled sugar sculptures are an exacting science that take years to master.
Roast turkey! You can't have the oven too high or too low, and the timing has gotta be just right otherwise it's either too tough or over done! I can never get it right!
for me it is pie crust. I can make awesome croissants and brioche, but cannot make pie crust to save meself.
The hardest things for me are things that require lots of patience. And the foods I don't enjoy making.
Short ribs are a good example, I don't especially care for them and it is hard as heck to get those babies tender. I just do not see the awe in them.

i would say,baking and pasteries,it's a science ,with little or no margin for error.
in the professional kitchen it's the black arts....lolololol
you can wing other stations,but not that one.
my second choice is sushi chef,knive skills OMG
they fillet a fish and it's still alive or swims,that's amazing!
For me I think the hardest thing I ever made was red fish court bouillon just because there are so many steps.
