Grilled cheese. Just take two slices of bread, put cheese (any you like) in the middle, butter the outside and fry until brown.

Panini: buy ciabatta bread at a bakery (Whole Foods sells it). Slice in half and fill with slices of mozzarella (the big white soft balls of mozzarella), fresh basil and slices of tomatoes...maybe a drizzle of olive oil too. Crack some pepper & salt on it. Eat it fresh and cold like that or put a little olive oil on the outside and grill it in a panini press until the cheese is melted.

*********OPEN-FACED BACON SANDWICHES
6 slices bacon
2 French rolls
Thousand Island salad dressing
Slices of lettuce
Slices of tomato
Shredded Cheddar cheese
Cook bacon and drain on paper towels. On 1/2 of a French roll, spread dressing, then add lettuce, tomato, bacon (3 slices per sandwich) and shredded cheese on top. Broil 2-3 minutes until cheese is melted. Serve immediately. Serves 2.

******HAMBURGER STUFFED FRENCH BREAD
1 loaf French bread
1 onion, chopped
3 cloves garlic, minced
1 lb ground beef, browned w/onion and garlic
1 can condensed cream of mushroom soup
salt and pepper to taste
1 1/2 cups shredded cheese (any type)
1/4 cup fresh parsley, chopped (optional)
In a skillet, sauté hamburger with minced garlic, chopped onion and (optional) parsley.
Preheat oven to 350°F.
Carve top in a circle (leaving a "cap" that you will replace on top later) out of French bread and hollow out the middle. Break up the bread innards into small pieces and set aside in a medium bowl.
To these bread crumbs, add the browned hamburger mixture, condensed cream of mushroom soup, and seasonings to taste.
Mix ingredients well and restuff this mixture back into French bread shell.
Top with cheese and replace the top (hopefully you saved it).
Wrap in aluminum foil and bake in 350°F oven 20 minutes. This will melt the cheese and help the flavors to combine. Slice and serve. Individually wrapped slices freeze well and make a quick and yummy take-to-work lunch.

******CHICKEN FRIED STEAK SANDWICH

2 pkg. tenderized cube or round steak
1 c. whole milk
1 1/2 c. flour
2 tsp. salt
1 tbsp. black pepper
1 1/2 - 2 c. cooking oil
Good heavy skillet
I start heating my skillet first and when it gets warmed up (7 minutes), I add my cooking oil and let it heat also. While that is heating up, I get the steak ready, pound each steak with the side of a mallet or palm of your hand until very thin. Place steaks (2 at a time) in shallow dish containing milk. Next, mix the flour, salt and pepper in a shallow dish. Remove steak from milk, dredge in flour mixture, place into skillet and brown on both sides. Continue cooking until all steaks are cooked.

Sauté sliced onion in butter. Place on hamburger bun with steak, lettuce, tomato and Ranch dressing. SO wonderful!!!!!

You want simple? Here is the best sandwich that I love...down in southern US we call them Po-boys...made on a crispy french bread...either ham, cheese, lettuce, tomato, mayo and pickle..OR...fried seafood of your choice instead of the ham. Another version of it is my fav...deli thin sliced roast beef warmed in a brown gravy...opened faced with swiss cheese and tomato and pickle..whatever condiments you prefer. Hot or cold these are great sandwiches...served with a side of chips.
