Cookie help please??!


Question: I'm going to bake some chocolate chip cookies, and is it ok if you don't have any vanilla extract and brown sugar??? Thnx for the avice!!! =]

if you leave out the vanilla it is fine it just wont taste AS good as if you had used it (but then again a am a nut for vanilla, i always use extra) and all brown sugar is, is white sugar with molasses so if you have some molasses in the house you can just add that along with the white sugar and then you will have brown sugar.

Try this recipe! it is real good (no vanilla needed)

Hazelnut-butter Cookies with Mini Chocolate Chips
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1 cup creamy unsalted hazelnut butter, well mixed before measuring
1/2 cup sugar
1/2 cup packed golden brown sugar
1 large egg
1 (12 ounce) package semisweet mini chocolate chips (2 cups)
Sift first 4 ingredients into medium bowl.
Using electric mixer, beat butter, hazelnut butter, and both sugars in large bowl until light and fluffy.
Beat in egg
Beat in flour mixture.
Stir in chocolate chips.
Cover and refrigerate at least 2 hours.
(Can be prepared 1 day ahead. Keep refrigerated. Soften dough slightly at room temperature before shaping.) Preheat oven to 350°F.
Line 2 baking sheets with parchment paper.
Using 1 level tablespoon for each cookie, roll dough between palms of hands into 1-inch balls.
Arrange 1 inch apart on prepared sheets.
Bake 1 sheet at a time until cookies are golden brown, about 12 minutes.
Let cool on sheets on racks 5 minutes.
Transfer cookies to racks and cool.
(Can be made 5 days ahead. Store airtight between sheets of waxed paper at room temperature.).

CHOCOLATE CHIP COOKIES

INGREDIENTS
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
3/4 cup white sugar
2 eggs
2 cups jumbo semisweet chocolate chips
1 cup white chocolate chips
1 1/2 cups chopped walnuts

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking soda and salt; set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time then stir in the vanilla. Blend in the sifted ingredients to form a soft dough. Stir in the chocolate chips, white chocolate chips and walnuts. Drop by heaping teaspoonfuls about 2 inches apart onto ungreased baking sheets.
Bake for 8 to 11 minutes in the preheated oven, or until lightly golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Brown sugar makes a cookie softer. White sugar makes it crisp.
