Anyone have an amazing chocolate cupcake recipe they would like to share or have tried?
and also I want some really good frosting, I don't want the store bought kind though. Anyone have a recipe for a really good frosting that I can also use to make letters with?
Answers: Ok since Valentine's is coming soon I thought I would bake my boyfriend a dozen cupcakes. I want to write a little message on them though.

Chocolate Gooy Cupcakes---Yummy!!!! Makes 6
INGREDIENTS
7 (1 ounce) squares finely chopped bittersweet chocolate
14 tablespoons unsalted butter
4 eggs
4 egg yolks
1 1/2 cups confectioners' sugar
3/4 cup all-purpose flour
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Lightly spray 6 - 3 inch muffin cups with nonstick cooking spray.
Place chopped chocolate and butter in a metal bowl. Set bowl above a saucepan of lightly simmering water and melt until completely smooth and even. Remove from heat and stir in eggs and yolks with a whisk. Lastly, stir in powdered sugar and flour.
Bake in preheated oven for exactly 7 minutes. The cake may appear under-baked. Remove from oven and serve immediately.
Self Filled Chocolate Cupcakes
INGREDIENTS
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1 egg
1 cup semisweet chocolate chips
1 (18.25 ounce) package chocolate cake mix
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C), or to the temperature recommended on the cake mix package.
Prepare chocolate cake mix according to package directions, but do not bake. In separate bowl cream together cream cheese and sugar until smooth. Beat in the egg until well blended, then stir in chocolate chips.
Line cupcake tins with cupcake papers. Fill 2/3 full with chocolate cake batter. Add 1 teaspoon cream cheese mixture to the center, and top with more cake batter.
Bake according to package directions for cupcakes. Cool and frost with chocolate or cream cheese frosting.
Molten Chocolate Cupcakes
INGREDIENTS
1 cup unsalted butter or unsalted margarine*
8 ounces semisweet chocolate chips, or bars, cut into bite-size chunks
5 large eggs
1/2 cup sugar
Pinch of salt
4 teaspoons flour (or matzo meal, ground in a blender to a fine powder)
8 extra-large paper muffin cups (or use regular paper muffin cups, which will make 12 cakes)
Garnish:
1 (6 ounce) container raspberries, barely moistened and rolled in about
1/2 cup sugar right before serving
DIRECTIONS
Melt butter and chocolate in a medium heat-proof bowl over a saucepan of simmering water; remove from heat. Beat eggs, sugar and salt with a hand mixer in a medium bowl until sugar dissolves. Beat egg mixture into chocolate until smooth. Beat in flour or matzo meal until just combined. (Batter can be made a day ahead; return to room temperature an hour or so before baking.)
Before serving dinner, adjust oven rack to middle position; heat oven to 450 degrees. Line a standard-size muffin tin (1/2 cup capacity) with 8 extra-large muffin papers (papers should extend above cups to facilitate removal). Spray muffin papers with vegetable cooking spray. Divide batter among muffin cups.
Bake until batter puffs but center is not set, 8 to 10 minutes. Carefully lift cakes from tin and set on a work surface. Pull papers away from cakes and transfer cakes to dessert plates.
Top each with sugared raspberries and serve immediately.

get the Betty crocker french vanilla cake mix. add 1 tsp of almond extract to the batter while mixing. OMG what a neat flavor.
then make a simple buttercream frosting
1 cup butter (no substitutes), softened
8 cups confectioners' sugar
1 teaspoons vanilla extract
1 tsp almond extract
1/3 cup milk
DIRECTIONS
In a mixing bowl, cream butter. Beat in sugar and vanilla. Add milk until frosting reaches desired consistency.

These are fabulous! You don't even need frosting. Very moist due to the cream cheese.
Cream Cheese Cupcakes
Quick and Easy recipe. A hit with those who like cheese cake. Top with your favorite filling.
INGREDIENTS
3 (8 ounce) packages cream cheese
1 cup white sugar
1 1/2 teaspoons vanilla extract
5 eggs
Filling:
FILLING:
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1/4 cup baking cocoa
1 cup whipped topping
1 (10 ounce) package frozen sweetened sliced strawberries, thawed
For filling, in a mixing bowl, beat cream cheese, confectioners' sugar and cocoa until smooth and fluffy. Fold in whipped topping. Process the strawberries in a blender or food processor until pureed.
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Line 2 (12 cup) muffin tins with paper liners.
In a large bowl, combine cream cheese and sugar. Mix until soft. Add eggs and combine. Add vanilla.
Distribute evenly into 2 (12 cup) lined muffin tins and bake at 325 degrees F (165 degrees C) for 35 minutes.
When done, the centers will fall in a bit while cooling. When cool, fill depressions with 2 to 3 tablespoons of your favorite filling. Store in the refrigerator.

FILLED RICH CHOCOLATE CUPCAKES
CUPCAKES:
3 c. flour
2 c. sugar
2/3 c. cocoa
2 tsp. baking soda
1 tsp. salt
2 c. water
2/3 c. vegetable oil
2 tbsp. white vinegar
2 tsp. vanilla
FILLING:
8 oz. cream cheese, softened
1/3 c. sugar
1 egg
1/8 tsp. salt
1 c. semi-sweet chocolate chips
Prepare Filling: In small bowl, beat cream cheese, sugar, egg and salt until smooth and creamy. Stir in chocolate chips; set aside.
Heat oven to 350 degrees. In large bowl, stir together flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar, and vanilla; on medium speed, beat 2 minutes. Fill paper lined muffin cups 2/3 full with batter. Spoon 1 level tablespoon filling into centers of each cupcake. Bake 20 to 25 minutes or until toothpick inserted in cake portion comes out clean. Remove from pan, cool completely.
VARIATIONS: Valentine Filling: add 4 to 5 drops red food coloring to filling.
Peanut Butter Chip Filling: Omit chocolate (cocoa); stir in 1 cup Reese's Peanut Butter Chips.
