Suggestions for a veggie meal please!?!


Question: im cooking for my vegetarian ex-girlfriend tonight, hoping to try and win her back!, im an AWFUL cook so need so suggestions for something, quick, easy, and filling! and i have a budget of about £13, cuz im very skint after christmas!!!

Try some dhal recipes. In fact, just go down the Indian cuisine path, there is a lot of variety and since you're English I guess it is also familiar.

Papadams are damn cheap :)

How about Stouffers Vegetable Lasagna and garlic bread, my family eats meat and they love it!

Nice bottle of wine, fresh steamed veggies, and veggie burgers.

Quorn and veg stir fry. Easy for someone who can't cook! Just slice up your veggies nice and evenly and chuck it all in the wok with the quorn and sauce of your choice. Serve with rice (use the microwave packet stuff if you are that bad a cook)

Quorn meat free roast or chicken slices with broccoli and cheese topping...Linda McCartney veggie sausages maybe....or go to Tesco and buy the Cauldron Foods Organic Tofu Marinated chunks..do a stirfry with them (treat as chicken, but less cooking time)

make pasta and serve with reb wine &have fun after that.

How about a spag bol made with Quorn mince, cheap and easy to make. The Quorn website has a recipe for it as well as for several other veggie meals.

buy a vegetables..carrot, celery, onion,leek,garlic, parsley. chop it, not blend, add an egg and bread crumbs and make a veggie burgers. some salt, pepper and cheese also. serve with a toast, or mashed potato

cook this, I am not a veggie but love this meal, its garlic onion and tomato butter beans!... Get a large onion and slice it thinly, cook in olive oil with whole garlic cloves (about 3) on the lowest heat for about 45 mins so the onions are soft but not brown, you just need to leave them there, then when done add some chopped tomatoes (1 tin) and the boil then add some butter beans from a tin (or two small tins) and some parsley. heat the beans through and serve with some garlic bread, should only cost you about £4 and tastes amazing! and you dont need to be a good cook because you literally just put it all in a sauce pan... when you serve it add a parsley leaf on top and it will look posh. Good luck for tonight ;)

Slice two zucchini
Slice two yellow "summer squash"
Layer them in a baking dish with canned diced tomatoes that are pre-seasoned with garlic and italian seasonings.
Top with cheese of your choice (mozzarella, parmesean, provolone all work great!!
Bake at 350 degrees for 1/2 hour or until veggies are tender.
Serve with a nice salad and a bread roll or breadstick

Summer Squash Parmesean!! I serve this at the small cafe my husband and I run and it is always a sell out.

If you want to keep it simple, how about a stuffed pasta (available from any good supermarket), with a tomato and mascarpone cheese sauce (ditto). You could liven up the sauce by frying some onions and mushrooms first, then adding the sauce (try a dash of wine too?!) - when it's heated through, simply pour over the cooked pasta (stuffed pasta only takes about 2-3 minutes to cook). Sprinkle with grated cheddar cheese, or freshly grated parmesan. A crisp green salad, some fresh, crusty bread and hey presto. Think about something light for dessert and a light, chilled bottle of wine. Best of luck and bon appetite.

Get one of those Duhdi or mooli, you know big thick long things....and you never know she might not be your ex for much longer.

How about a vegetarian version of spaghetti bolognaise - loads of carrots, mushrooms, courgettes, onion and tomato - you can NOT go wrong with that.

Get some quorn chicken style fillets from the frozen section
and el paso enchilada mix
and cook the quorn like you wold cook the chicken. hope this helps, and it won't cost you know more than like 4 quid

Here is a recipe for Taco Salad Tostada. It calls for ground beef, but you could substitute canned refried beans (warm them in pan with small amount of veg. oil, or don't need oil in microwave) You could also click on recipe for Taco Salad on same source.

1 (14.25 ounce) package TACO BELL HOME ORIGINALS Taco Dinner Cheesy Double Decker
1 pound ground beef
1 1/2 cups shredded lettuce
1 tomato, chopped
1 1/2 cups KRAFT Shredded Cheddar Cheese
1/2 cup TACO BELL HOME ORIGINALS Salsa

2. Cooking Directions
Preheat oven to 350 degrees F. Spray both sides of Tortillas with cooking spray, then place in a single layer on baking sheet. Bake 10 min. or until crisp and lightly browned.
Cook and season meat with Taco Seasoning as directed on package.
Spread each tortilla with 1 Tbsp. of the Nacho Cheese Sauce; top with meat mixture and lettuce. Crumble 1 Taco Shell over each tostada; top with tomato, cheese and salsa.
Yield: 6 servings

You can substitute other brands and shredded Mexican (fiesta) cheese. Recipes are meant to be "adapted." Some recipes suggest Feta cheese. Don't get it. Tastes awful.

Chipmonk huz it in the bag. Quorn mince used in spag bol. Ingredients, Quorn mince, spaghetti, jar o' sauce!! easy peasy. Plenty o' dosh left fur a nice bottle o' veggie wine(ye can get one in Asda or Tesco). Guid luck.
