Bowties and Bacon

Ingredients:
1 Box of Bowtie Noodles
1 lb. bacon
1 can (or 2 large fresh) tomatoes chopped
1 small chopped onion
1 tsp. Crushed Red Pepper (the kind you put on pizza)
1 tsp. roasted garlic
1/4 tsp. black pepper
1/4 cup Grated Parmesean Cheese (Save for Topping)

Cook bowtie pasta noodles per package instructions (el dante...a little firm), drain and set aside.

In large frying pan, chop up bacon into bite sized pieces and add diced onion. Cook on medium heat until bacon sizzles crispy (you may add a little EVOO (Olive Oil) and onions are carmelized. Add all of the other ingredients (NO SALT) and simmer for 10 minutes. Finally, add the noodles, stir and top with the Parmesean Cheese.

WONDERUL meal!

Serve with slices of garlic bread on plates.

Makes approx. 4 large or 6 small servings.

Ok, when I was a single bachelor, not making much money I came up some great variation to Mac N' Cheese.
1.) Mac n' Cheese mixed with spaghetti sauce and ground beef.
2.) Mac n' cheese with peppers, onions, and ground sausage.
3.) Mac n' cheese with garlic and chicken.

do you use a crockpot?There all all kinds of things to do with those.My latest that I did is I got some pork ribs pthem in crock pot till done.Take them out and add bbq sauce broil till bbq sauce looks hot and bubbly.I seasoned the meat before I put it in crock pot.this cooking like this makes them very tender and you can cut with a fork.If you work put food into crock pot before leaving dont forget to turn it on.I have done this.it will be ready when you come home

Quick Chicken With Cornmeal Dumplins

Ingredients:

1/2 cup all purpose flour
1/2 t ground sage
12 oz. skinless, boneless chicken breast halves
2 T cooking oil
2 cups frozen mixed vegetables
1 14 ox can reduced sodium chicken broth
1/2 cup milk
1 11.5 oz pkg refrigerated corn bread twists (like canned biscuits)
1/2 cup shredded Mexican cheese blend

Preparation:

1. Preheat oven to 450 degrees F. In resealable bag combine flour, sage, and 1/4 t each salt and pepper. Cut chicken into bite size pieces. Add to bag, coat well.

2. In skillet over medium high heat stir and brown chicken in hot oil for 2 minutes. In colander, run cold water over vegetables. Add vegetables, along with broth and milk ot chicken. Bring to boiling, stir. Divide chicken-vegetable mixture among 4 small baking dishes. (may be cooked in one large dish instead) Separate corn bread strips, place four strips over chicken veg mixture in each dish,. Sprinkle with cheese. Bake 9 or 10 minutes. Yield 4 meals.


Ground Beef Turnovers

4 cups all purpose flour
1 T sugar
2 t salt
1 3/4 cups shortening
1/2 cup ice water
1 egg, lightly beaten
1 T vinegar
FILLING:
2 pounds uncooked ground beef
1 cup diced carrots
2 medium potatoes, peeled and cut into 1/4 inch cubes
1 medium onion, chopped
1 to 2 t salt
1/4 t pepper
half and half cream

In a bowl, combine flour, sugar and salt, cut in shortening until mixture resembles course crumbs. Combine water, egg and vinegar, mix well. Add shortening mixture, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball. Cover and chill for 30 minutes. Meanwhile, combine the first six ingredients of filling.
Divide pastry into 15 equal portions. Roll out on lightly floured surface into 6 1/2 inch circles. Mound a heaping 1/3 cup of filling on half of circle. Moisten edges with water, fold dough over filling and press edges with a fork to seal. Transfer to a greased baking sheet. Repeat with remaining pastry and filling. Cut three slits in top of each turnover, brush with cream. Bake at 375 degrees for 35 to 40 minutes or until golden brown. YIELD: 15 turnovers

here's some pasta recipes for a small budget...

Pasta w/ Chicken, chickn broth, olive oil, minced garlic, red pepper flakes, sun dried tomotoes, capers, minced onion and parmesan cheese.

Cook chicken and saute above ingredients, add parmesan cheese last and toss w/ pasta

OR

Low Fat Chicken Alfredo

Chicken broth, minced garlic and onion, parsley, salt/pep a little bit of olive oil, low fat sour cream and parmesan cheese.

Cook your chicken and cut into pieces, sautee garlic, parlsey and onion in a little bit of olive oil. Add 1/2-3/4c of broth to mixture -simmer. Add 2-3 heaping tablespoons of sourcream and add 1/3 cup parmesan cheese...

I love doing sweet and sour chicken at home. I take a few chicken breasts and slice them across the grain into 1/2cm pieces then I mix a little cornstarch and water in a bowl. I sprinkle a little white pepper and salt over the meat, then I stir it into the cornstarch and water. I saute this lightly in a pan. It cooks so quickly so don't cook it all the way through. I take it out of the pan and add some onions and fry those lightly then I add some ketchup, vinegar, sugar and some chopped fruit like pineapple and a little salt. Then I pour the sauce over the chicken. It's cool because you can add in frozen vegetables or a splash of wine if you have it. It's pretty flexible.
