Can you bake without yeast and baking powder ?!


Question: Im into alternative foods. Im trying to skip wheat flour. Im making my own flour with sweet potatoes and such. Im hoping to get a home bread machine to make bread, but is it possible to do it without yeast and baking powder ?

You could actually make your own yeast.

You can also make unleavened bread. You might tire of this after a bit but it could be done.

Eggs can provide some leavening but not enough, I think.

I cannot see too much bread happening without some way to make it rise.

Baking powder is just baking soda,cream of tartar, and cornstarch. If that helps at all.

No, but not both of them go into everything. If you are making bread you must have yeast, otherwise you will have something more like... .manna, a flat bread-like thing, that is very tough. Other baked goods, such as cakes, brownies, muffins, all require baking powder to have the same effect but not for the bread dough consistency. Good luck!

look for a beer bread recipe, i remember one that was a quick bread (not yeasted). Check all recipes.com

you need an oven to bake!!! does not matter if you have yeast or soda

6 tablespoons unsalted butter, plus more or greasing the pan
1 1/4 cups granulated sugar
6 large eggs, separated
5 tablespoons instant espresso
6 tablespoons Dutch-processed cocoa powder (recommended: Droste)
6 tablespoons dark rum or Marsala
1 1/2 cups ground, toasted, blanched almonds
All-purpose flour, for coating the pan
Confectioners' sugar, for dusting

Melt the butter in a glass bowl over simmering water. Once the butter melts, whisk in the sugar and the egg yolks, and cook for 5 minutes, stirring constantly so that the eggs become ribbon-like and light in color (don't scramble.) Whisk in the coffee, cocoa powder, rum and almonds, and continue cooking, stirring constantly, until the mixture becomes smooth and creamy.

Transfer the cake mixture to a mixing bowl and set aside.

Preheat the oven to 375 degrees F.

Butter and flour a 9-inch round cake pan.
In a clean, separate mixing bowl, beat the egg whites until the just begin to stiffen and hold soft peaks. Be sure to stop before they form hard peaks. Gently fold the whites into the chocolate mixture. Pour the batter into the prepared pan and bake until firm and beginning to separate from the sides, about 30 minutes. Remove from the oven and allow to cool 30 minutes more. Flip cake over, dust with confectioners' sugar and cut into wedges before serving.

There are three ways to leaven something
1) Yeast -yeast breads
2) Chemicals-quick breads
3) Steam -cream puffs- souffles
Note that methods 1&2 also use steam to a lesser degree in a process called oven rise
The problem with steam is that it's a very violent process bc as water changes to steam it rapidly increases in volume 1200x and if you don't have a proper protein structure in place to contain that rapid expansion your product will blow up on you .see oven burst
In culinary the two most common proteins used for creating structures are egg whites and the gluten that has been created as a result of working high protein wheat flours .
So if you're going to use steam only you wiill have to figure out a way to contain the violence

how about baking soda? the other way is to beat a lot of air into the dough. that might work.
