Help me with dinner? The main dish will be ready in 35minutes?!


Question: This is what I'm making for dinner served over rice. It is something we have all of the time. I want to have spinach as a side dish because i have a ton of it. What recipe could i use for the spinach or would plain steamed spinach with S&P and butter be good?

Portobello Pork Chops

4 bone-in pork rib or loin chops, 3/4-inch thick
1 1/2 cups mild chunky salsa
1 cup chopped Portobello mushrooms
1 cup shredded cheddar cheese
2 tablespoons maple syrup
1/4 cup snipped fresh parsley

Cooking Directions
Heat oven to 375°F. Trim fat from chops.

Spoon salsa into a 3-quart rectangular baking dish. Arrange chops on top of salsa. Combine Portobello mushrooms, cheddar cheese and maple syrup in a medium bowl. Spoon over chops. Bake, uncovered, for 25 to 30 minutes. Sprinkle with parsley. Serve chops with salsa mixture.

Makes 4 servings.

As much flavor as you have going on in the main dish, I would stick to a simple side such as the spinach with just salt, pepper and butter, maybe a little garlic sprinkled in too, but just a little. Serve up some bread if you have any and you've got yourself a wonderful meal. Enjoy!

maybe some rice you can spoon the juice and salsa over top with a light salad...yes I missed the rice part ..no reason to get nasty..

Yep, steam it and serve with S&P, or else make a very small roux when the butter melts. You can do this with some of the liquid from the spinach without adding too much cream if you are watching your fats. Yummy!

Otherwise, how about a simple spinach salad with some canned oranges, fresh strawberries, or even toasted nuts?

I *always* make my spinach like this:
steam, squeeze to mostly dry..then saute butter, garlic, salt, pepper and lemon juice in a pan till the garlic sizzles. Add the spinach, enjoy! We usually add a TON of garlic, since we love the flavor, but you can add as much as you want :)

Sounds so good! steam the spinach, add some salt and pepper.. and then the perfect finishing touch, a sprinkle of nutmeg.... will go perfectly with the mapley syrup touh in the chops. Enjoy!

For a very light and different side dish: chop blanched spinach, squeeze dry and season with equal parts sesame oil, vinegar, salt and soy sauce, sprinkle with toasted sesame seeds or chopped peanuts.
