Ground Beef Turnovers

4 cups all purpose flour
1 T sugar
2 t salt
1 3/4 cups shortening
1/2 cup ice water
1 egg, lightly beaten
1 T vinegar
FILLING:
2 pounds uncooked ground beef
1 cup diced carrots
2 medium potatoes, peeled and cut into 1/4 inch cubes
1 medium onion, chopped
1 to 2 t salt
1/4 t pepper
half and half cream

In a bowl, combine flour, sugar and salt, cut in shortening until mixture resembles course crumbs. Combine water, egg and vinegar, mix well. Add shortening mixture, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball. Cover and chill for 30 minutes. Meanwhile, combine the first six ingredients of filling.
Divide pastry into 15 equal portions. Roll out on lightly floured surface into 6 1/2 inch circles. Mound a heaping 1/3 cup of filling on half of circle. Moisten edges with water, fold dough over filling and press edges with a fork to seal. Transfer to a greased baking sheet. Repeat with remaining pastry and filling. Cut three slits in top of each turnover, brush with cream. Bake at 375 degrees for 35 to 40 minutes or until golden brown. YIELD: 15 turnovers

how about a shepards pie you take hamburger meat and put it in the bottom of a pie pan or cake pan (depending on how many people) then take corn or any other veggies you like and layer it on top. Then add mashed potatoes and topp off with cheese. Cook at 350 until its heated through and cheese is melted.

We like little sirloin patties that are stuffed with bleu cheese and grilled on the bbq ... yum!

My family likes baked spaghetti. I make mini meatballs, boil the spaghetti and mix up both with sauce, lots of cheese, some herbs, maybe some peppers and onions. Put it all in a lasagna pan, and bake it till it all comes together. Doesn't need to bake long as everything is cooked. Melt some cheese over the top and serve.

Bisquick has a yummy hamburger pie recipe. Check out their website and foodnetwork.com. CDKitchen.com is also cool. You can type in the main ingredient and search through all the recipes with it from there.

brown it up and then add a jar of spagetti sauce. cook it slow over low heat, for about 3/4 hour. then add cooked cheese stuffed tortellini and warm thru. it is excellent and no one will know you used jarred sauce!

Homemade Salisbury steak is great with mushrooms and gravy.

Here's a good one by Rachel Ray:

Salisbury steak, mashed potatoes and creamed spinich.

Potatoes:
2 pounds russet potatoes, peeled and chunked, 3 large potatoes
Salt and pepper
1/2 cup half-and-half or cream, eyeball it
4 ounces, 1/2 cup garlic and herb cheese (recommended: Boursin)
3 tablespoons chopped chives or, 2 scallions, thinly sliced
Meat and Gravy:
1 1/4 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 small onion, finely chopped
1 tablespoon steak seasoning blend (recommended: Montreal Seasoning by McCormick) or, coarse salt and pepper
Extra-virgin olive oil, 3 tablespoons, 3 turns of the pan
12 crimini or baby portobellos, sliced
12 shiitake mushrooms, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef stock

Spinach:
2 boxes frozen chopped spinach, 10 ounces, defrosted in microwave
2 tablespoons butter, cut into pieces
1/2 cup heavy cream


Place potatoes in a pot and covered with water. Cover pot with lid and bring water to a boil. Salt boiling water and potatoes. Leave lid off pot and simmer at rolling boil until tender, 8 to 10 minutes.
While potatoes cook, combine meat, Worcestershire, onion and steak seasoning or salt and pepper. Form 2 large, oval patties, 1-inch thick.

Preheat large nonstick skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the meat patties to a hot pan. Cook meat 6 minutes on each side until meat is evenly caramelized on the outside and juices run clear. Remove meat and cover with loose tin foil to keep warm. Add 1 more turn of the pan extra-virgin olive oil and butter to the pan, then the mushrooms. Season mushrooms with salt and pepper and saute mushrooms until tender, 3 to 5 minutes.

While mushrooms cook, squeeze defrosted spinach dry by wringing it out in a kitchen towel. To a small skillet, add butter and cream and heat to a bubble over moderate heat. add spinach and salt and pepper. Cook until spinach thickens with cream, 3 to 5 minutes.

To mushrooms, add a sprinkle of flour to the pan and cook 2 minutes more. Whisk in stock and thicken 1 minute.

While sauce thickens, drain potatoes and return to hot pot. Smash potatoes with a little half-and- half or cream and garlic and herb cheese. Smash and incorporate chives. Add salt and pepper, to your taste.

We fry hamburger patties, drain the grease and pour a can of Campbell's Tomato soup over the patties. Let the soup come to a simmer and serve over cooked rice.

Also:
To the Tomato soup, you can add different flavors to make it: Italian (oregano, basil, maybe mozzarella on top, etc.)
Mexican (salsa, or chilies, pinto beans, sprinkled with cheese)
Asian (soy sauce, bean sprouts or water chestnuts, etc.)

All go well with this basic recipe, and lets your imagination soar! This is also a great recipe that kids like and can help make!

Five Ingredient Crockpot Chili

1 lb. ground beef
2 onions, chopped
1 cup water
3 (14 ounce) cans diced tomatoes with green chilies, undrained
1 Tbsp. chili powder
2 (15 oz.) cans red kidney beans, rinsed and drainedBrown ground beef in large skillet and drain. Add to 3-4 quart crockpot along with remaining ingredients. Cover crockpot and cook on low for 7-9 hours until vegetables are tender. 6-8 servings

brown meat and season,drain off fat
make 4 servings of rice
boil or steam hollowed out green peppers in some water till SLIGHTLY soft- place in casserole dish
mix meat, rice and one egg and stuff into peppers- any extra meat mixture just place around peppers in casserole dish
pour on one family sized can of condensed tomato soup (no water or milk added)
cover and bake at 375 for 45-60 min til soup is bubbly

so good and yummy on a cold winter day!
