I need an all-purpose flour substitution. I have other flours on hand.?!


Question: I'm making a bunch of chocolate chip (drop) cookies. I tripled the recipe, which calls for 9 cups of flour total. I only have 7 cups. On hand, I have bread flour and whole wheat flour. What is the best substitution, and how much? Or do I need to go to the store or make less?

You can substitute the whole wheat flour for all purpose flour 1:1. Same with the bread flour.

If the recipe calls for cake and pastry flour, then you need about 2 Tbsp less for each cup added.

For cookies definitely use the bread flour-------it is a softer wheat and will work much better that the whole wheat.

bread flour will give you a much better textured cookie. the crumb won't be as heavy, and the cookies will rise more than with whole wheat flour. the taste will be more like the cookies you buy in the store

substitute the flour 1/1. i assume you know what your dough should look like. you have enough excellent ingredients without going to the store and int erupting your baking
