First it is all about the dog not the topping.
Buy Nathans all beef dogs, they sell like a steak when you grill them!
For a party I would set up a condiment table have everything under the sun!! Ketchup, mustard (several kinds, brown, yellow, dijon, ect.) diced onions, mayo, diced tomatoes, a couple kinds of relish, sweet pickle, chow chow, dill pickle, coleslaw (a southern fave), carmelized onions, salsa. You will not believe what people eat on dogs.

BEEF is the BEST and Oscar Mayer is the best brand in my opinion. At least for the National brand. If you live in North Eastern USA See if you can find Berks Hot dogs.
There are:
Weiners: Mixture of meats (pretty much anything, generally pork, turkey, and beef)
Frankfurters: Generally beef.
Schnitzel: weiners
There are much more, just get whatever you like the best as well as some kind of sausages, I like bratwurst.
i recomend getting foot long buns and hot dogs and choped onions and mustard and ketchup and relish and it will be fine cause peeps like foot long hotdogs
Kosher or all-beef hot dogs taste the best. I personally like Hebrew National and Nathan's brands.
As far as toppings go, you could set out bowls of lots of stuff and then your guests could put whatever they wanted on their hot dog. Some ideas:
mustards - yellow, whole grain, spicy, jalapeno
ketchup
mayonnaise
relishes - sweet pickle and dill pickle
shredded cheese(s)
hot sauce
chopped cucumber
banana pepper rings
jalapeno slices
chopped onions
Or you could make a batch of coney dog sauce and serve with chopped onion and shredded cheese.
I personally think Kayem natural casing is the BEST. They're flavorful and not greesy.
In New England we have them weiner style :) That's with a brown meat sauce, mustard, onions and celery salt. So yummy! here's the recipe for the meat sauce:
3 pounds ground beef
2 teaspoons chili powder
2 teaspoons dry mustard
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/8 tsp ground ginger
1 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1 teaspoon soy sauce
10 ounces ketchup
you just put it all in a pot and cook for at least an hour till it's all broken up, deep brown and saucey. It's so yummy! :)
Nathan and Oscar Meyer are very good. Buy a wide selection. Have a buffet of toppings: sliced tomatoes, onions, gren peppers, shredded lettuce, chili con carne, cheese sauce, shredded cheese, mushy boiled peas, frijoles refritos, dill pickles, cucumbers, all kinds of salsa, different types of mustard, tabasco, catshup, BBQ sauce. Pick a hotdog bun that has body, not light and spongy. With all these fillings, you need a bread that will keep together.
OK. You can try all my favs. I usually use 1/4 lb Johnsonville or Oscar Meyer. More expensive but they taste really good. Either boil or steam.
Chicago Style - Mustard, relish, Tomato (I know but you can leave them off), dill pickle spear, Hot sport peppers, and a dash or two of celery salt.
Mexican Style - Taco sauce, lettuce, jalapenos, Mexican cheese, onions,lettuce.
Basic style - Mustard (your fav)relish, onions.
Chili with or without cheese. I like Steak & Shake chili. A little mustard, dog, chili and smoother with cheese. You can use grated or cheese wiz.
Different kind - Mayonaise, onion, dill relish and peperochini peppers and a dash or two of celery salt.

I would highly suggest as a non jewish person to get a kosher hot dog. Hewber National, Nathans, etc. Then get lots of toppings. I have a 6 year old and we had a hot dog party. We had sour kraut, chili, cheese, those onions in red sauce, onions, ketchup, mustard, relish, pickles, etc.
I like to use "Hebrew National" hot dogs, they're a bit more expensive than most brands but they are all-beef franks and just the right size for hot-dog buns. I like to grill mine on my indoor grill. After they're done you can keep them in a foil pan to keep warm as your guest prepare their hot-dogs. Some things I use on my dogs are grilled onions, dill relish, pickles, sauerkraut, chili, and cheese. Hope this helps you. Good luck.

Go with a natural casing dog they have extra flavor and a great snap! now for a few recipes, sort of.
Coney Dog
1 hot dog
1 hot dog bun
1/4 cup your favorite chili
2 Tbs. yellow onion, diced
Cheddar cheese
Place a dog in the bun and set on a holding recepticle. pour chili down the hotdog and top with onions and cheese
kraut dog
1 hot dog
1 hot dog bun
1/4 cup sour kraut
whole brown mustard
carraway seeds
swiss cheese optional
place dog in between the bun and slather with mustard. place a little cheese (optional) over the mustard and top with sour kraut and sprinkle with carraway seeds.
Chicago Dog
1 hot dog
1 poppy seed hot dog bun
sweet pickle relish
diced yellow onion,
seeded tomato
yellow mustard
dill pickle spear
celery salt
place dog in bun. top with mustard then layer onion and tomato. Place a pickle spear on top of the assembled dog and sprinkle with celery salt
there's a start for you. I like grilled or fried dogs the best! not deep fried but fried in a pan.
If your having a party, then chances are not all of your guests will like the same thing. I would suggest using whatever brand of hot dogs and buns you like and then sitting up an assortment of toppings so each guest can fix theirs according to their tastes. I would put out some chili sauce, cheese, sauerkraut, mustard, ketchup, relish, onions, & hot peppers. At least the way, everyone is sure to get what they like.
If you can....grill those dogs. They taste the best that way.
