Here's one that's been in our family for years:

DINAH SHORE CHEESECAKE

CRUST:

1 3/4 c. graham cracker crumbs
1/4 c. finely chopped walnuts
1/2 c. melted butter

FILLING:

2 (8 oz.) pkgs. Philadelphia cream cheese
3 eggs
1 c. sugar
2 tsp. vanilla
3 c. sour cream

Mix crust ingredients. Remove 3 tablespoons for topping. Press remaining on bottom and up sides of 9" spring form pan.

Combine eggs, cheese, sugar and vanilla. Beat until smooth. Blend in sour cream.

Pour into crust. Top with reserved crumbs. Bake at 375 degrees for 1 hour. Chill 4 to 5 hours before serving.

I also make an amazing chocolate capuccino cheesecake with a chocolate crust and whipped cream on top when it's served, but the recipe's a bit labor-intensive. Have been making it for years as well. People go nuts over it. I got the recipe originally from the AllRecipes recipe site. Here's the link for that one. It's a-mazing!!

I made an amazing Chocolate Espresso Swirl Cheesecake for Christmas, and everyone liked it so much I had to make another one for New Year's!

I found the recipe by googling around and reading comments about posted recipes, and also by going with what sounded good. Like if you're a fan of the tangy cheesecakes, you definitely want a recipe that calls for sour cream, but if you like the sweeter cheesecakes, go for a recipe that doesn't have the sour cream.

COUNTRY CHEESECAKE

DOUGH:

1 3/4 cups all-purpose flour
1/2 cup confectioners sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter
3 egg yolks
3 tablespoons dairy sour cream

FILLING:

4 eggs
1 egg white
3/4 cup sugar
1 1/2 pounds of farmers or ricotta cheese
1/2 cup sour cream
2 tablespoons grated orange or lemon peel
1 teaspoon vanilla extract

To make the dough, combine flour, sugar, baking powder, and salt in a bowl. Using a pastry blender or two knives cut the butter into the flour mixture leaving a coarse and crumbly texture (mixture will contain some lumps).
In a separate bowl, beat egg yolks into the sour cream. Stir the beaten egg yolks into the dough mixture. Knead in the bowl until mixture begins to form a dough and is well mixed. Wrap dough in plastic wrap and refrigerate one to two hours.

Roll dough out on a lightly floured surface to fit a 13 x 9 x 2" pan in approximately I 15 x 11" rectangle.

Line the bottom of the pan with the dough, stretching to fit so that it comes up to about two thirds of the way up the sides of the pan.

For the filling, beat the eggs and egg white at high speed of electric mixer until thick. Add the sugar gradually, continuing to beat at high speed until egg whites are stiff, but not dry, and peaks form.

Press the cheese through a sieve or potato ricer or pulse in food processor. Fold gently into beaten egg white mixture.

Add the remaining ingredients. Mix thoroughly, but gently so as not to deflate the egg whites.

Turn the cheese filling into the dough lined pan.

Bake at 350F for 40 minutes or until set.

Cool and cut into squares.

mini cheesecakes
1 box vanilla wafers
2 8-oz. pkgs creamcheese, soften
1/2 cup sugar
1 1/2 t. flour
2 eggs
1/2 cup sour cream
1 t. vanilla
Topping: 1 container sourcream
1 tsp. vanilla
1/4 cup sugar
canned cherries

mix cream cheese,sugar,flour. mix until blended well. add eggs, one at a time.mixing until well blended.blend in sour cream and vanilla. place mini foil cupcake liners on a cookie sheet. place 1 vanilla wafer, flat side down, in each liner. put 1 t. cream mixture on top of cookie in each liner. bake at 350 for about 20-25 minutes or until slightly cracked. cool, blend sour cream,vanilla and sugar. top with sour cream mixture and cherries
