I think what your looking for is the Olive Gardens Toscana soup. I found a copycat recipe on the internet months ago that I have been making. Hope this is what you want. It really does taste like the Olive Garden one.

3 links Italian Sweet sausage
2 medium baking potatoes, cut into 2" cubes
2 to 3 slices bacon, diced
3/4 cup onions, diced
1 medium to large clove garlic, minced
2 cups escarole, chopped
2 tablespoons chicken base
4 cups water
1/2 cup whipping cream

Remove sausage from casings; brown in a skillet, breaking up, until cooked through. Place onions and bacon in a large saucepan and cook over medium heat until onions are tender. Add garlic and cook 1 minute longer.
Add chicken base, water and potatoes, simmer 15 minutes. Add sausage, escarole and cream. Simmer 4 minutes and serve.

If you don't have Chicken base, which is available in most grocery stores, you can use 3 boullion cubes (use the cubes that make 1 cup)

Bacon Baked Potato Soup

3/4 cup chopped Leek, washed well and drained
4 large Garlic cloves, chopped coarse
1 tablespoon Olive Oil
1 (1/2 pound) russet Pre-Baked Potato
2 1/2 cups Chicken Broth
3 tablespoons Heavy Cream
1 1/2 tablespoons minced Fresh Chives, Bacon Bits, and Sour Cream


Preparation:
In a heavy saucepan cook the leek and the garlic with salt and pepper to taste in the oil over moderately low heat, stirring, until the leek just begins to soften, add the potato, peeled and cut into 1-inch pieces, and the broth and the heavy cream, and simmer the mixture, covered, for about 10 minutes. At this point you can also add some grated cheddar cheese into the soup if you like. When serving, add a dollop of sour cream on top and in the center of the soup. Garnish with bacon bits and chives.
