How about some fajitas or stir fry?

dont know, but i would heat it back up in a pan with some diced apples and brown sugar.

Pot pies: put in pie pan with veggies and gravy, top with crust, bake. For crust you can use, pie crust, puff pastry, filo, cornbread mix, get creative.

Make a sweet and sour pork stir fry
Thinly slice your remaining pork steak
thinly slice onions, green peppers, red peppers, carrots, broccoli, cauliflower and/or any other vegetable that you prefer. Open an 8 oz can of chunk pineapple.

Saute the vegetables starting with the carrots, onions and peppers, add the broccoli & cauliflower and other vegetables stirring until crisp tender (about 6-7min) Add the pork steak.
If pre cooked then just simmer until heated thru, if raw cook til no pink remains and juices run clear. Add drained pineapple
season with soy sauce and pepper. If you want to have more of a sauce use the pineapple juice and thicken it with 3 tsp of corn starch. You may use a sweet sherry instead or as part of the juice, pour over mixture and stir cooking until sauce is translucent. Serve over rice and with crispy noodles (chow mein noodles)

Fajitas, quesadillas, would be awesome with the leftover pork.

How about shredding it up, add your favorite bar-be-que sauce and serve it on rolls with french-fried potatoes. Bar-be-que pork sandwiches.

You might try Polenta or a hearty Civil War - era dish called "hog and hominy". For the latter, dice up the pork and stir it into a medium-sized saucepan with a can of white or yellow hominy with the liquid, a dash of garlic, a tablespoon of diced onion, and a teaspoon of parsley flakes. Heat through, salt and pepper to taste and serve with fresh hot cornbread.

Left over pork is always a difficult product to work with but the first thing that comes to mind is what was the first cooking method or style? Breaded chops could be incorporated into a stew with a course "gravy" by making a rue out of whole wheat flour and your favorite fat (maybe even the fat you used to fry them the night before). If they were grilled they would be a good start for a richly flovored soup. The missing ingredient here for optimim pleasure is gelatine you can purchase that at the local super market under the Brand name KNOX UNFLAVORED GELATINE. A high quality stock or broth will make with your favorite vegetables and pasts or potatoes will complete the dish. But remember the same reason you bought the chops is their worst enemy when it comes to left overs they lack connective tissues and fats.
