Answers: Grilling. You lose the fat and gain flavor.
Steamed...you aren't adding anything, but aren't losing the nutrients that you would lose by boiling.
Boiling.
However you cook it, don't eat the skin - that has the most fat.

I think poaching or steaming would be the healthiest, as you don't add any oil or fat.
Grilling is a good option too, as long as you have a non stick grill and don't need to add any oil.
Steamed. Clean and wash, put it on the pan, and cover it up with a lid in low heat. Make sure you marinate it before, and it doesn't matter if it's just plain boneless, or bone in, it will cook through, and it will be very tasty. Well, you don't necessary have to marinate it, it's optional.
Poaching.
Try making a pocket of sorts in a chicken breast and stuffing it with goats cheese, spinach and pine nuts.
Bring your water up to just under a simmer (bubbles should come to the surface but not break the surface causing a boil affect) salt and season water well or use low fat chicken stock. Place your breast in the poaching liquid and cook for 25 mins. Breast should be 100% submerged in the liquid.
Serve with some veg on the side and some sort of starch...
Take off the skin and cut off ALL visible fat. You can then either steam or boil it, both of which will not have much flavor. The fat will drip off and you will be left with a 99.9% fat free chicken breast but it just won't taste as good. Serve it with a bunch of green vegetables.
Poach it. Get some good chicken, organic or kosher. Boil water, salt it, submerge the chicken in it, turn off the heat and and wait. About 20 min for a chicken breast/part. 1 hour for a whole chicken.

grill it...the fat drains through the rack...if u boil it, the fat doesnt drain...
When you steam or boil chicken you normally add a good amount of salt to compensate for a lack of flavor (and too much sodium is definitely not healthy). I would go with grilling the chicken breast with non-stick spray or a little extra virgin olive oil (a heart healthy fat) and using fresh or dried herbs for flavor.
I highly recommend getting a George Foreman grill. It is absolutely amazing. Since the meat is squeeze in between the grilling plates, the fat is squeezed out of it but the result is still juicy and flavorful.
