Is it necessary to dry my homemade egg noodles?!
I dont get it.... Can anyone solve this mystery for me?
Why dry the noodles?
Answers: I am making egg noodles. I want to prepare it fast. All recipes I found say to roll out, cut into lengths and then DRY for 2 hours!!! Why do I have to do this? Cant I just cook them right away? I mean, Jeez! They are supposed to be fresh right?

Why dry the noodles?
Well you do not need to dry them if you are making enough to eat. at my reastaurant we make it and cook right away, now if you make extra you'd want to dry them so they will last longer because they will start to turn brownish in the fridge within a few days.
you don't have to dry them for long. My mom makes homemade noodles all of the time and does not dry them. It will make them a bit thicker but no need to dry them.
