Simple homeade biscuts??!

Purists are gonna blast me for this, but this quick recipe will work for you. I use it a lot. (It's really a simple scone recipe without the sugar and spice). Makes a light biscuit.

Lazy Cook's biscuits: Makes 8

2 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
2/3 cup milk
1/4 cup oil
1 egg
Preheat oven to 425 degrees. Do it...it matters!

Mix dry ingredients together in a large bowl.
Whisk wet ingredients together in a small bowl.
Add wet ingredients to flour mixture and combine quickly with a large spoon.
Knead only enough to bring together. (4-6 times)
Pull off a wad of dough and shape by hand.
Lay biscuits in the pan just touching.
Bake 12 to 15 minutes.

You can double the recipe.

Here's a more traditional one:

Buttermilk Biscuits:
2 cups AP flour
1 Tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon bakng soda
5 tablespoons chilled solid vegetable shortening.
1 cup buttermilk or sour milk. (1cup milk w 1 teas. vinegar let stand 5 minutes)

Preheat oven to 425. Sift dry ingredients.
Break shortening into small pieces and put in the flour mix.
With your fingers, mix shortening into the flour mix unti it resembles a coarse meal. It's fine if there are a few lumps of shortening.
Add milk and mix with a fork until a dough forms.
Knead 4-6 times and bring it together in a ball.
Divide into 12 pieces.
Shape biscuits by hand.
Lay in an ungreased pan just touching.
Bake at 425 for 12 to 15 minutes.

Yes, you could roll out the dough and cut them. But, you don't need to. I haven't done that in well over 20 years.

Easy Mayonnaise Biscuits

2 cups self-rising flour
1 cup milk
6 tablespoons mayonnaise

Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, stir together flour, milk, and mayonnaise until just blended. Drop by spoonfuls onto lightly greased baking sheets.

Bake for 12 minutes in the preheated oven, or until golden brown.

There's one on the side of the Bisquick boxes that is really good. Me and my family like to fix them drop biscut style.

1/2 cup shortening
2 cups all purpose flour
1TBSP sugar (optional)
1TBSP baking powder
1 cup milk
I mix the flour, sugar and baking powder in a bowl. Then cut in the shortening until it resembles coarse meal ( you don't have to have a pastry blender, I just use a fork). Once blended, add in the milk. Drop by large spoonfuls onto heated pan for a nice crispy bottom or onto greased cookie sheet or cast iron skillet. Bake at 450F for 10-12 minutes.
Tip: I usually place my cast iron skillet into the oven when I turn it on. When I am ready to put the biscuits on, I put spread shortening all over the inside of the pan and then drop the biscuit in. They always come out with the perfect crispy (not crusty or burnt) bottoms.

Hands and forks came before pastry blenders, so you will be fine

Baking Powder Biscuits
`````````````````````````````
2 c flour
2 tsp baking powder
pinch salt
tablespoon of sugar
1/2 cup unsalted butter
1 egg + 3/4 cup of milk

(makes 18 biscuits, or double the recipe to make 36 )

* sift the dry ingredients together into a mixing bowl, cut the butter in until it resembles coarse corn meal

* mix the milk & egg and pour into a well in the center of the contents of the bowl, combine gently, just to form a ball, put onto a floured board and knead gently about 15 times,

* you may let the dough rest for about 20 minutes, preheat your oven to 350*F, then pat the dough out with your hands on a floured surface to about 1/2" thick, making a square

* cut small square pieces with a knife dipped in flour each time you need to, transfer to a lightly oiled baking sheet and round off the corners & push uneven edges into place

* with squares, you do not need to re-roll your dough as you do if you are cutting circles, but if you choose to cut circles, you can make 'children's biscuits' of the scraps if you have kitchen assistants....just put scraps onto a lightly oiled or buttered baking tray, brush them with a little diluted egg yolk and sprinkle on cinnamon and sugar // or you can butter half of the scraps and put jam or little pieces of apple w/ cinnamon & sugar on the top of the butter, then top them with unbuttered pieces, squish them together a little so the filling will stay inside, they are done in a trice

bake at 350*F for 12 or 15 minutes, until golden, remove from oven and place on a metal rack to cool a little

Biscuits Supreme
Prep: 15 minutes
Bake: 10 minutes

Ingredients
3 cups all-purpose flour
1 tablespoon baking powder*
1 tablespoon sugar
1 teaspoon salt
3/4 teaspoon cream of tartar*
3/4 cup butter or 1/2 cup butter and 1/4 cup shortening
1 cup milk

Directions
1. Preheat oven to 450 degrees F. In a large bowl stir together the flour, baking powder, sugar, salt, and cream of tartar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of the flour mixture. Add milk all at once. Using a fork, stir just until moistened.

2. Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing dough for four to six strokes or just until dough holds together. Pat or lightly roll dough until 3/4 inch thick. Cut dough with a floured 2-1/2-inch biscuit cutter, rerolling scraps as necessary.

3. Place biscuits 1 inch apart on an ungreased baking sheet. Bake for 10 to 14 minutes or until golden. Remove biscuits from baking sheet and serve warm.

4. Makes 12 biscuits

5. *Note: If baking powder and cream of tartar appear lumpy, sift through a fine mesh sieve before using.

6. Buttermilk Biscuits: Prepare as above, except substitute 1-1/4 cups buttermilk or sour milk for the 1 cup milk in the rolled biscuits and 1-1/2 cups buttermilk or sour milk for the 1-1/4 cups milk in the drop biscuits.

7. Drop Biscuits Supreme: Prepare as above through step 1, except increase milk to 1-1/4 cups. Using a large spoon, drop dough into 12 mounds onto a greased baking sheet. Bake as directed above. Makes 12 biscuits.
