Why is is every freakin hard boiled egg i make the shell sticks to it?!


Question: I swear I never had this problem before but the last 4 times I made hard boiled eggs the shell would NOT come off the freakin egg, it's making me so mad. Here is how I make them....... I put them it water bring to a boil, after a minute I turn the burner off and let them cook for like 30 minutes. I know the shell sticks to fresher eggs and mine expire on February 9th are they too fresh? This is like the only thing in the world I cannot make! I hate letting them sit for like 3 weeks cause if I buy them I want to use them now, I feel like tuna salad today not next month, help!

Your eggs are to fresh. Fresh eggs have a very strong connection between the shell and white (that lining between the whites and shell). When the egg ages one to two weeks the layers break down the strength the whites"stick" to the shell of a boiled egg. I always buy a special dozen or two just for boiling eggs. That "special dozen" gets aged at least one week in my fridge before I boil them. I also boil my eggs just so salted water comes to a boil boil 5 minutes, turn off the water and let the eggs rest in the hot water for 15 minutes before chilling in cold water. The eggs turn out perfect every time without the green (ish) yolks.

Yes, they are too fresh. Fresh eggs just don't want to let go of the shell. Give 'em a week and they'll work fine. We used to raise hens, and you should try peeling one that fresh! It turns into egg hash :)

First off, don't boil them for 30 minutes - 15 is plenty. Then immediately submerge them in cold water -- I usually let the cold water run over them for about 2-3 minutes. Then hit both ends of the egg on a hard surface to crack the shell, and then roll the egg with the palm of your hand to further crack the shell. With a wet hand and a wet egg, using the side of your thumb, you should be able to peel the shell off in two or three pieces, leaving your egg looking nice with no gouges.

You got it, fresher eggs stick to the shell and older eggs tend to let the yolks sag toward the bottom of the shell when you cook them (the old deviled egg dilemma) so I do not think there is anything you can do. It is because of the natural immune system for the egg, the proteases which slowly break down the part which sticks to the shell you loath so much. Sorry!

And don't let anyone tell you to leave the eggs out at room temp. This could be dangerous. Think foodborne illnesses, it's like playing Russian Roulette with eggs and salmonella.

what helps me is to peel under running water, try it next time.

you can boil them faster if you just let them boil (don't turn the heat off) for about 8 to 10 minutes. but the shell will still stick. put some salt in the water and it helps some, but it will still stick a little. if you peel them under cold running water it makes it a lot better, the shell usually slips right off, and you can catch the water in a bowl to use for something else, like watering your plants, so you don't waste it.

You don't have to boil them that long even. Bring the eggs to a hard boil and then put a lid on the pot and turn the burner off. Walk away for about five minutes. While the eggs are still warm, peal them. If you peal the eggs warm you will get a perfect egg almost every time. I learned that trick from working in a restaurant. When you have to prepare boiled eggs quickly, this works best.

Always start at the end where the cavity is and they should peal easily.

Plunge the hard boiled eggs in a bowl of iced water. This will make the insides of the eggs contract, while the egg shell retains its shape and size. Thus, the two will separate.

Hold the egg with the larger end down. Swiftly knock that bottom end of the egg on the counter. Then roll the egg on the counter to break all the shell. Peel off.
Voila!! No stuck shell!
