What's the name of this southwestern side dish made with corn meal? See description below...?!


Question: I've had this side dish with meals I've been served at authentic southwestern cuisine restaurants in New Mexico and Arizona, but I've never known the name of it. It's spooned onto the plate, but kind of keeps it's shape (in other words it's not liquid). It's obviously mostly corn meal, and it seems like it may have milk or cream, it definitely has mild to spicy peppers in it, and I believe onions, and some whole kernels of corn as well. It's almost like a corn bread except that it has too much liquid in it to keep its shape as a bread. Anyone know what I'me talking of? I'd love to try to make it at home! Thanks!

It is definitely old fashioned spoon bread. The recipe goes something like this:

INGREDIENTS:
3/4 cup cornmeal
1 teaspoon salt
1 cup boiling water
3 tablespoons melted butter
2 large eggs
1 cup milk
2 teaspoons baking powder

PREPARATION:
Combine cornmeal and salt in a mixing bowl
Stirring constantly, gradually add boiling water, keeping smooth; stir in the melted butter
In a separate bowl, beat eggs until thicken and pale in color Add milk and beat to combine
Add milk and egg mixture to the cornmeal mixture with baking powder
Beat with an electric hand-held mixer or whisk to blend
Turn into a generously greased 8-inch square glass baking dish
Bake at 350° F for about 30 minutes, until firm
Serve spoon bread with plenty of butter
