I love to steam a whole head, put it in a bowl, then cover the head in cheese sauce. Then you just serve it w/ a big spoon, scooping the veggie + sauce.
I alos like to cut it into bite-size peices, dip it into an egg/milk wash, then into Italian bread crumbs, and deep-fry it! It is SO YUMMY this way!
CAULIFLOWER AU GRATIN
3 pounds cauliflower, cleaned, cut into 2-inch flowerets
1/4 cup butter
1/2 cup chopped onion
1/4 cup flour
4 cups boiling milk
salt and pepper to taste
1/8 teaspoon grated nutmeg
1 1/2 cups grated Swiss cheese
1 teaspoon melted butter
In a kettle of salted boiling water, cook the cauliflower flowerets for 3 to 4 minutes, or until tender. Drain cauliflower, and plunge into ice cold water to stop the cooking. Drain cauliflower. Pat dry, and transfer to a buttered 2-quart baking dish.
Preheat oven to 350 degrees. In a saucepan, cook the onion in 3 tablespoons of butter over moderate low heat, stirring until it is softened. Stir in the flour and cook the roux over low heat, stirring, for 3 minutes. Add milk and whisk over moderate heat until the sauce thickens. Simmer the sauce for 10 minutes. Season with salt, pepper and grated nutmeg. Pour the sauce over cauliflower. Sprinkle the cheese over the sauce. Pour butter over cheese. Bake until sauce in golden brown.
Cauliflower with cheddar sauce:
A variation of this recipe uses the cream sauce with the addition of 1 1/2 cups grated cheddar cheese, and dry breadcrumbs sprinkled over the top of cauliflower.
I don't like it myself, but I saw Rachel Ray make faux-mashed potatoes with cauliflower once. She boiled the cauliflower, put it through a ricer and added milk, sour cream, s & p and shredded cheese (maybe Gruyere?). It looked interested.
Cut into flowerettes and cook
Put them in a baking tray, and pour over cheese sauce and bake until it is bubbly.
Broccoli will do also, or both combined.
Steam the whole head (take the leaves off) in the microwave until it's cooked through. In a separate bowl, mix some mayo and dijon mustard. Spread that all over the cooked cauliflower, and then cover that with grated cheese (sharp cheddar is best). Re-cover the bowl tightly with plastic wrap and nuke it again until the cheese is melted. YUMMMMMMMMY!
Cut the head into bite size pieces, toss with olive oil, salt and pepper. Place in a 350 degree oven, roast until tender. About 30 minutes.
If you like cheese, I just made up a casserole recipe that we loved. It is similar to macaroni and cheese only use cauliflower instead of the macarone and add some other veggies to the cheese sauce. Clean a head of fresh cauliflower and cut out the center core. Steam core down in salted water until just tender enough to chop easily. Meanwhile saute 1/4 sweet onion and 1/2 chopped red pepper and a clove of garlic in some olive oil. When tender add some flower to make a paste and then some skim milk to make a white sauce base. Melt in your favorite grated cheese, I had jack and cheddar on hand and it was great but you could use about any cheese from veleeta to some fontina or smoky gouda. After cheese is melted, chop the steamed cauliflower in big chunks then add to the cheese sauce. Spray a casserole dish and pour in mixture. If you're not watching fat and calories add some more shredded cheese on top then pour about a half cup of half and half over the top, then about a cup of seasoned cracker crumbs. Bake at 350 until bubbly. This would also be great with some chicken breast meat, sweet italian sausage slices or cubed smoked ham tossed into the cheese mixture for a main dish casserole. (I suppose you could use frozen cauliflower but I prefer fresh!) You can also steam whole heads of cauliflower and then dry them and rub with butter or oil then seasoned bread crumbs and broil for a minute. Or you can use any kind of packaged cheese spread like pimento and coat the warm steamed head lightly then sprinkle with bread crumbs or ground nuts and then broil. We eat whole heads of cauliflower for a meal for two when we're not in the mood for meat.
CAULIFLOWER & CHEESE BAKE
1 head cauliflower
3 tbsp. olive oil
1 lg. onion, sliced thin
Salt & pepper to taste
1/3 c. fine bread crumbs
1 (8 oz.) pkg. mozzarella cheese, grated
1. Cut off cauliflower flowerettes.
2. Steam until tender (approximately 20 minutes).
3. Meanwhile saute onions in oil until golden.
4. Pour in crumbs. Stir.
5. Layer cauliflower, cheese and onions in a baking dish.
6. Season with salt and pepper.
7. Sprinkle remaining cheese on top.
8. Place under broiler until cheese melts and top turns light brown.
