Glutamate used in cooking?!


Question: Glutamate powder for cooking :I was told that it is mostly used in chinese meals and would like to know how to use it and in which quantity. In Chinese Restaurants are served such wonderful somehow jelly like soups, does Glutamate make it?

Its actually MONOSODIUM GLUTAMATE, a crystal like powder which imparts flavour to chinese/oriental cooking. In small quantities, its perfectly all right but unconfirmed research says that large quantities of it can cause cancer.
Its definitely not recommended for children below 10 years of age.

No MSG or monosoduimglutamate is a salt. A lot of people have allergies to it. You can use chicken stockpowder as a reasonable and safe substitute.

You can do without Monosodium glutamate EVER. Use regular salt.

As for jelly like soups, it's either egg (whole or whites) or cornstarch.

Monosodium Glutamate is a chemical that causes your taste buds to dilate, Exposing more receptors of flavor. It is primarily useful when food has little flavor of it's own. It tricks the palate into thinking the food tastes better than it really is. It is not a thickener
