Its just different culinary names.

Because fish is not the name of the animal. The animal is called either Trout, Walleye, Northern, and so on. So "Walleye is to Fish" as "Cow is to Beef".

Lamb = Lamb = Sheep
Veal = Veal = Beef
Chicken= Chicken = Poultry
Duck = Duck
Tofu = Soybeans = Edamame = Tofurky
Fish = Fish = Seafood

Pig is not = pork. Pork refers specifically to the meat of a pig, and there are other parts. In fact it is said that we use every part of a pig except its squeal. And not to put too fine a point on it, but while cow may be = beef, beef is not always = cow. Beef is any bovine more than 1 year old, and may be cow, hiefer, steer or a bull under 2 years. So it isn't as simple as you try to paint it -- except maybe for fish. Things seldom are. Live and learn.
