2 parts olive oil
1 part red wine vinegar
1 tablespoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
salt and pepper to taste (go easy on it in the marinade, you can always add after cooking). Marinate for 6-8 hours or overnight, then grill the steak.

This is the best! Don't be put off by the fish sauce until you've tried it.

1 kg beef chuck steak, diced into 3cm pieces
1 tbsp finely chopped lemon grass
1 small red chilli, finely chopped
1 tbsp crushed ginger
2 tsp mild curry powder
1 tsp cracked black pepper
1 tsp brown sugar
1 clove garlic, crushed
? cup (60ml) fish sauce

Combine, in a bowl the beef, lemon grass, chilli, ginger, curry, pepper, sugar, garlic and fish sauce. Mix well, cover and refrigerate several hours or overnight.

Here in Italy we are not use to marinate the meat. But when we need to do it, we just use extra virgin olive oil, half an onion (or scallion), salt, pepper, thyme.

i know you said no alcohol.. but beer is one of the greatest one i have used.. i hate beer and the taste burns off and it makes the meat very tender....

i used fresh onion and italian salad dressing... i marinate over night then when the steaks are almost to were i want them throw the onion and grill them! can also use mushrooms and peppers
had some meat tenderizer...
some garlic power ( not salt it dries the meat)
if i am feeling zesty i had chili powder..
or a onion soup rub mix also very good!

hickory liquid smoke, sea salt and fresh cracked pepper. mix, slather on, stab the steaks all over with a fork to allow the marinade to sink in, flip them over a time or two over the course of half an hour or so, then they are ready to go.
