country apple coffee cake
2 tablespoons butter, softened
1 1/2 cups chopped peeled apples
10 ounces biscuits
1/3 cup brown sugar, firmly packed
1/2 cup pecan pieces
1/4 teaspoon cinnamon
1/3 cup light corn syrup
1 1/2 teaspoons whiskey
1 egg
GLAZE
1/3 cup powdered sugar
1/4 teaspoon vanilla
1-2 teaspoon milk
Preheat oven to 350 degrees.
Using 1 tablespoon of the butter, grease bottom and sides of a 9-inch round cake pan.
Spread 1 cup of the apples in pan.
Separate the biscuits.
Cut each one into 4 pieces.
Arrange point side up over apples.
Top with remaining apples.
In small bowl, combine remaining 1 tablespoon butter, brown sugar, cinnamon, corn syrup, whiskey, and egg.
Beat well.
Stir in pecans.
Spoon over biscuit pieces.
Bake 35-45 minutes or until brown.
Prepare glaze and drizzle over coffee cake


Hot & Sour Sauteed Apple (Microwave)

2 tablespoons unsalted butter
1/4 cup green onions (thinly sliced)
2 lbs cabbage (savory, sliced into 1/4 inch strips)
2 apples (Tart, such as granny smith. Cored but not peeled, thinly sliced)
2 tablespoons balsamic vinegar
1/4 cup brown sugar
1 teaspoon cornstarch
1/2 cup golden raisins
combine butter and onions in 3 quart microwavable casserole dish.
cook on high 1 minutes to melt butter.
add cabbage and apples.
cover tightly and cook on high for 5-7 minutes, or until tender/crisp.
let stand, covered while making sauce.
in 1 cup glass measuring cup combine vinegar, brown sugar and cornstarch.
cook on high 1-2 minutes or until slightly thickened, stir once.
ad to cabbage and apples.
add raisins and mix.
serve immedietly.

caramel apples & carrot
3 cups sliced peeled apples
1 1/2 cups peeled baby carrots
1/2 cup water
1/8 teaspoon salt
2 teaspoons margarine
1/4 cup firmly packed Splenda sugar substitute (Brown Sugar Blend)
1/2 teaspoon cinnamon
1/3 cup dried tart cherries
Place apples, carrots, water and salt in 3-quart saucepan.
Cover and cook over medium heat until water starts to boil.
Reduce heat and simmer 3 minutes; drain.
Add remaining ingredients, tossing gently until combined.
Cook over medium heat 3 minutes longer or until sugar is dissolved and apples are glazed.

Jewish Apple Cake, (made by my sister in law), it's the best I've ever tasted. And she's Polish ;-).

A good apple pie, with a great crust can't be beat either.

I'm really boring-I just like a nice crisp juicy apple plain.

Apple Crisp...it's sweet.

I like to use tart apples when I cook up sauerkraut.

Simple....core an apple......a cooking apple is best for this....fill center with whatever you like...nuts,marshmallows,dried fruit, choc chips,etc....I also add a dash of brown sugar & cinnamon....wrap in foil...bake at 350 for about an hour.....yummo!

I am Austrian and we love:

Apfel Im Schlafrock (Apples in Robes)
2 c flour
1 c butter
1 c cream cheese
1 egg yolk
3 apples (cooking apples, not hard variety) -- peeled & cored
4 T sugar
1 ts cinnamon
1/4 c raisins
sauce-----equal parts vanilla ice cream, whipped cream

Cut the butter and cream cheese into the flour. Work this into a smooth dough with the egg yolk and chill it.

Cut the cored and peeled apples into 3/8" round slices with the hole in the center. Mix 4 tablespoons sugar with the cinnamon. Roll out the dough on a floured board to 3/16ths of an inch thick and cut it into rounds a little larger than the apple slices with a glass or large cooky cutter. Place an apple slice on each round and fill the center with the sugar and cinnamon mixture. Mix the raisins and almonds with the remaining sugar and cinnamon, and pile it on top of the apple slices. Cover each apple slice with a second, larger round of dough and press the edges down well. Bake them on a buttered cooky sheet in a moderately hot over (375 degrees F.) for 15 minutes. Serve with a sauce made of equal parts of softened vanilla ice cream and whipped cream.

My favorit apple dish was a dish my grandma used to make. I was Apples and Rice baked in a deep dish with sugar and cinnamon. The exact apples she used I'm not sure. But haven't had it in over 15 yrs. If anyone knows this recipe I'd like a copy of it.
