How do you grate potatoes and fry them as hashbrowns without them getting all mushy??!


Question: This is how I make them...
It may seem like a small pain in the neck, but nothing beats fresh fried hash browns : )

Grate your potatoes into a bowl of cold water. Place the bowl of potatoes in the fridge an go about preparing the rest of your meal. After they have been in the fridge at least a half and hour or so, heat your oil in the pan you are going to cook the potatoes in. Drain the potatoes in a colander and squeeze out as much water as you can. I use a kitchen towel and wring out the water, putting the potatoes back in a dry bowl. Then just fry 'em up!
The secret is cold and dry potatoes fry up much more crisp than just trying to fry the fresh grated potatoes.

boil or bake them until done then cool in fridge peel then grate

YOU SHOULD BE GRATING THEM WHEN THEY ARE RAW. PEEL THE POTATOES AND THEN GRATE THEM. PUT SOME BUTTER OR MARGARINE IN A FRYING PAN AND HEAT THEN ADD THE GRATED POTATOES LEAVING FOR ABOUT 1 MINUTE THEN TURN THEM OVER AND BROWN THE OTHER SIDE. I HAVE A SALAD SHOOTER THAT HAS A GRATER ATTACHMENT SO I GRATE THE POTATOE RIGHT INTO THE HOT PAN.

Turn your oil to a higher temp.

Use a standard grater. Heat your pan up at med high heat.
Drizzle with oil once pan is hot(a couple of tablesoons) Add hashbrowns press down to even layer, cover let cook about 4-6 mins
Turn over add some extra oil and cook till brown

Potatoes have a lot of moisture and that's what you need to eliminate before you start frying.

Personally, I use a potato ricer. It's the only thing I've found that really gets the moisture out of the grated potatoes. The trick to hash browns is to get rid of as much moisture as possible before cooking them. You can use paper towels to get moisture out, but it doesn't do enough. You can put the grated potatoes in a clean kitchen towel and squeeze wring the water out of them.

A hot pan is the next step!

Grate raw potatoes onto a clean tea towel. squeeze all the excess moisture out. Turn them out into you pan of hot oil, add salt and pepper, leave to brown on one side before turning over to brown on the reverse side. Turn heat down till cooked in the middle.

soak coarsely grated potato's in cold water and dry them well . make sure you're pan is oiled and hot.
